What’s at its best right now – and why it’s so good for you

R A DICCHIO
Bitter and crunchy with vivid purple/pink leaves, radicchio
appeals on the plate as well as to the palate. It’s a favourite
in Italy, and varieties range from the firm-hearted kind
with purple white-veined leaves to flouncy, pink-speckled
castelfranco. Radicchio is a nutritional powerhouse, too:
it’s a great source of vitamins C, E and K, along with folate,
potassium, copper and manganese.

How to enjoy
The bitter leaves yearn for sweet companions, so add
some to a mixed leaf salad along with fruit – sliced pears
and berries are great – or a honey or maple-sweetened
dressing. Radicchio’s bitterness is also tamed by heat:
slice into wedges, drizzle with olive oil and sear cut-side
down until softened and charred.

A compound called xanthohumol,
found in hops (the flowers of the
plant used in beer-making), may
help combat metabolic syndrome
by changing the gut bacteria.
The findings, by researchers
at Oregon State University, are
being hailed as a potentially
important advance in the
treatment of metabolic syndrome,
a cluster of conditions including
obesity and high blood pressure
that increase the risk of heart
disease, stroke and type 2 diabetes.
But don’t order another round just
yet: the studies have only been
conducted in animals so far and
human trials will be needed to
confirm a direct link.


TRENDING TREMELLA MUSHROOMS
Also known as beauty mushrooms or snow mushrooms, tremellas
are a type of jelly fungus finding their way into ‘goodness bowls’ and
smoothies. Used in Chinese medicine for centuries, they’re said to
improve the moisture content and elasticity of the skin. One website
claims the fungus “is essential for youthful skin”. Take that as you will...
