saltand2 bayleavesina
pan.Bringtotheboil,then
leavetocool.Trim400g
rhubarbstalks,cutthem
intoshortlengths,then
packintoa sterilisedglass
jar.Coverwiththepickling
liquid,seal,thenchillfor
atleast2 days.Eatwith
charcuterieoroilyfish.
2 FOOLTrim500grhubarb
andcutintochunks.Cook
ina panwith80gsugar
untilsoft.Stirin2-4tsp
rosewatertotaste.Whip
250mldoublecreamtosoft
peaks,thengentlyfoldin
therhubarbuntilrippled.
Servewithgingerbiscuits.
3 CRUMBLETrimandchop
therhubarb,thenputin
a bakingdish.Addsugar
(about100gsugarto500g
rhubarb),plus2 tbspwater
andgrated,preservedor
groundginger.Coverwith
