  • 2 freshrosemarysprigs,halved

  • 2-4medium free-range eggs

FORTHEBATTER


  • 140gplainflour

  • 4 mediumfree-rangeeggs, beaten

  • 200ml whole milk


1 Tomakethebatter,whisktheflour
and4 beateneggsina bowluntil
smooth.Graduallyaddthemilk,
whiskinguntilsmooth.Seasonwith
saltandpepperandsetaside.
2 Heattheovento200°C/180°Cfan/
gas6.Putthesausagesina roasting
tin,drizzleoversomeoliveoil,
season,thenroastfor 15 minutes
tocolourlightly.Addthetomatoes
(I leavethemwhole,onthevine)and
mushroomstothetin,drapethe
baconoverthemushrooms,spoon
overa littleoilfromthebaseofthe
tin,addthethymeandrosemary
sprigs,thenseasonagain.
3 Increasetheovento220°C/200°C
fan/gas7. Returnthetintotheoven
for 10 minutes,thenremoveit and
pourinthebatter.Putthetinstraight
backintheovenfor25-30minutes
untilthebatterispuffedupand
golden.Cracktheremainingeggs
(seetip)intolowspotsinthepudding,
thenreturnit totheovenfor6-8
minutesoruntilthewhitesareset
andtheyolksstillrunny.Servehot.
