  • smallpineapple,peeled,eyes
    removedandthinlyslicedinto
    12 rounds(sliceasthinlyasyou
    cananddon’tremovethecore)

1 Forthebase,pulsethebiscuits
ina foodprocessortomakefine
crumbs(orputina freezerbagand
bashtofinecrumbsusinga rolling
pin),thenmixinthemeltedbutter
anda pinchofsalt.Packintothebase
ofthepreparedcaketininaneven
layer, smoothing down with the


backofa spoon.Chilluntilneeded.
2 Heattheovento180°C/
160°Cfan/gas4.Forthefilling,
putthecreamcheese,mascarpone,
200gcastersugarandthekefir/
souredcreamina mixingbowl,
thenmixusinga balloonwhisk
(oranelectricmixer)untilsmooth.
Gentlywhiskintheeggs,oneat
a time,thenaddthevanillaextract,
lemonzestandallbut2 tspofthe
lemonjuice.Gentlymixintheflour
untilsmooth.Spoonthemixture
overthechilledbiscuit base, then
levelthetop.
3 Bakefor50-60minutesuntilthe
topislightlygoldenandsetatthe
edgesbutthecentrestillwobbles
whenthecheesecakeisshaken
gently.Removethetinfromtheoven
andleavetocoolona wirerack.
4 Whenthecheesecakehascooled,
heattheovento150°C/130°Cfan/
gas2.Forthetopping,mixthe
souredcreamwiththe1 tbspsugar
andthe2 tspreservedlemonjuice,
thenspreadthemixtureoverthe
topofthecheesecakeandreturnit
totheovenfor 25 minutes(itwill
stillbea bitsoftandwobblybutwill
setoncooling).Removeandleaveto
cooloncemore,thencoverloosely
andchillforatleast4 hours
(overnightisbest– seeMake
Ahead).Leavetheovenonif you’re
makingthepineappleflowers.
5 Fortheflowers,blotthepineapple
sliceswithkitchenpaper,then
arrangeon2 bakingtrayslinedwith
compostablebakingpaper.Mixa
fewdropsofthefoodcolouringinto
a tablespoonofwater,thendrop
a littleofthecolouringontothe
middleofhalftheflowersusing
a teaspoon.Bakefor 20 minutes,
thenflipandbakefor 20 minutes
moreoruntilthepineapplefeels
drytothetouch.Whilethe
pineappleflowersarestillwarm,
pusheachsliceintoa minimuffin
holetosetit ina flowershape(see
MakeAhead).Usetodecoratethe
cheesecake,justbeforeserving.
