a wellinthemiddleoftheflourand

oneofthebeateneggs,thenmix
witha woodenspoontocombine.
2 Mixinthestandmixer(orinthe
mixingbowlusinganelectricmixer)
onmediumspeedfor 15 minutes
oruntilyouhavea smoothbutwet
andstickydough.Turnthespeed
upslightlyandaddtheremaining
100gbutter,a tablespoonata time,
makingsureeachadditionis
incorporatedintothedoughbefore
addingthenext.Mixfor5 minutes
moreuntilthedoughissmooth,
slightlystickyandveryelastic.
3 Coverthebowl,thenleavethe
doughtoriseinthefridge overnight
(seeMakeAhead).
4 Forthefilling,mixtheNutellawith
thetahiniandallspiceina medium
bowl.Dusttheworksurfacewell
withflour,thentipoutthedough
anddustthatwithflour,too.Rollout
toa rough30cmx 60cmrectangle,
movingthedougha fewtimes
duringrollingtopreventit sticking.
Dustwithextraflourasnecessary.
Spreadthefillingevenlyoverthe
dough.Startingfroma longedge,roll
upthedoughtightlylikea swissroll.
5 Withtheseamunderneath,cutthe
doughinto6 equalpieces.Rolleach
piecesoit’sslightlylonger,then
makea cutlengthwaysdownthe
centreofeachpiece,leaving1cmat
oneendsothehalvesarestilljust
attached.Twistthe2 strands
aroundeachotherina looseknot,
thenputeachoneina baking
paper-linedYorkshirepuddinghole.
Coverloosely,thenleaveina warm
placetoprovefor 30 minutes.Heat
theovento180°C/160°Cfan/gas4.
6 Brushthetopsofthebunswith
theremainingbeatenegg,then
bakefor 25 minutes.Brushagain
withthebeatenegg,coverwithfoil
tostopthebunsbrowningtoomuch,
then bake for 10 minutes more or


untilthebunsfeelspringytothe
touch.Leavetocoolinthetinfor
5 minutes,thentransfertoa wire
racktocoolcompletely.Eatwhile
stillwarmorasfreshaspossible.

thenbubblefor5 minutes,stirring

catching,untilthemixturethickens
andisgolden.Pourevenlyoverthe
shortbreadbase,then leave to set

3 Forthetopping,putthechopped
darkandmilkchocolateina
heatproofbowl,thenmeltovera
panofjustsimmeringwater(don’t
letthewatertouchthebowl).Stir
gently,pourthechocolateoverthe
caramelandspreadwitha palette
knife.Cool,cutintosquares, then
setona wirerack.
4 Todecorate,putthechopped
whitechocolateina separate
heatproofbowl,thenmeltinthe
samewayasthedarkchocolate.
Transfertoa pipingbagandcut
a smallholeatthepointto
makea nozzle.Carefullypipe
crossesontoeachsquare,then
leavetosetbeforeserving.
