  • 60gcookingchorizo,diced

  • 1 redonion,finelychopped

  • 2 garliccloves,finelychopped

  • 1 tbspsweetsmokedpaprika

  • 2 x 400gtinschoppedtomatoes

  • 3 freshthymesprigs

  • 2 x 400gtinsbutterbeans,
    drainedandrinsed

  • 4 x 120gsustainablecodfillets,
    skinless,cutinto3cmchunks

  • 4 sheetsfilopastry(we used
    Jus-Rol), halved

    • 2 tbspoliveoilforbrushing

    • 300gsteamedtenderstem
      broccoli to serve




1 Heattheovento220°C/200°Cfan/
gas7. Heata mediumsaucepan
overa medium-highheat,frythe
chorizofor3-4minutesuntil crisp,
thentransfertoa plate.
2 Addtheonionwitha pinch
ofsaltandfryfor7-8minutesuntil
softening,thenstirinthegarlic
andpaprikaandfryfor2 minutes
more.Addthetinnedtomatoes
andthymesprigs,returnthe
chorizotothepan,thensimmer
gently for 10 minutes.

3 After 10 minutes,removethe
thymesprigs,stirinthebutter
beansandcod,thentransfertoa
mediumbakingdish(about20cm).
4 Scrunchupeachpieceoffiloand
arrangeoverthetopofthefilling
asa pietop,tryingnottooverlap
thepiecestoomuch.Lightly
brushthepastrywiththeoil,then
bakethepiefor 15 minutesuntil
thepastryisgoldenandcrispand
thepieisbubblingattheedges.
Servewiththebroccoli.
