basmatirice.Stirintotheonions
afterthecurrypaste(step3)andheat
untilpipinghot,thencontinuewith
therecipe.Usesweetchillisalmon
fillets, if you prefer, for extra spice.



  • 300gbasmatirice

  • tbspvegetableoil

  • 2 largeredonions,finelysliced

  • 2 garliccloves,crushed

  • Largethumb-size piece fresh
    ginger,grated

  • 1 cinnamon stick

    • 4 tbspmildcurrypaste(weused
      Patak’s;checkit’sglutenfree)

    • 800mlchickenstock(gluten-free)

    • 2 x 80gfilletssustainably
      sourcedhot-smokedsalmon,
      skinremovedandfleshflaked

    • 240gbabyleafspinach

    • smallbunchfreshcoriander,
      chopped, plus extra to serve




1 Rinsethericeina sieveunder
runningcoldwaterfor2-3minutes,
thendrainandsetaside.
2 Heattheoilina largefryingpan
(witha lid),thenfrytheonionsfor
7-8minutesuntilsoftening.Addthe
garlic,gingerandcinnamon,thenfry
fora minutemore.Addthecurry
pasteandfryforanotherminute.
3 Stir the rice into the onion mixture

(seetips),thenpouroverthestock.
Bringtoa simmer,turntheheat
down,coverthepanwiththelid,then
cookthericegentlyfor8 minutes.
Turnofftheheat,thenleavetostand,
stillcovered,for 10 minutes.
4 Gentlystirthesalmonandspinach
intotherice,thencoveragainand
leaveofftheheatfora fewminutes
untilthesalmonhaswarmed
throughandthespinachhasjust
aboutwilted.Seasonwell,stir
inthecoriander,thenremovethe
cinnamonstick.Servewithan
extrascatteringofcoriander.
