    1 Whisktheeggyolksandsugarina bowluntilpale.
    Beatintheflourandcornflour,thensetaside.Heatthe
    milkandcreamina panuntiljuststartingtoboil,then
    removefromtheheat.Leavefor 30 seconds,thenpour
    ontotheeggsyolks,whiskingcontinually.When
    combined,tipbackintothepanandstirovera medium
    heatuntiljuststartingtoboil.Turndowntheheatand
    simmerfora minute,thenremovefromtheheatand
    addthelemonextract.Pourintoa bowlanddustwith
    icingsugar,thenleavetocool.Oncecool,transferto
    a pipingbagwitha plain3mmnozzle.Chillfor1 hour.
    2 Ina pan,slowlybringthe85gbutterand220mlwater
    toa boilovera mediumheat.Onceboiling,quicklyadd
    ½tspsaltandtheflour.Removefromtheheatandstir
    continuallyfor1-2minutesoruntilthedoughpulls
    awayfromthesides.Transfertoa plateandleaveto
    coolfor 10 minutes.
    3 Heattheovento230 ̊C/210 ̊Cfan/gas8.Line3 oven
    trayswithbakingpaper.Returnthedoughtothepan.
    Addtheeggsoneata time,beatingwellbetween
    additionsuntilsmooth.Transfertoa pipingbagwith
    a plain1cmnozzle.Pipe 12 x 3cmballsontoeachtray,
    leavingabout4cmbetweeneachone.
    4 Bakefor18-20minutesuntilgoldenandfirm.
    Piercea holeinthebasesofthebunswitha skewer,
    thensitontheirsidesandreturntotheovenfor
    3 minutestodryout.Removefromtheoven,leave
    tocool,thenfill eachbunwiththechilledcream
    mixtureusingtheholeinthebase.
    5 Todecorate,meltthechocolateina heatproof
    bowlsetovera panofgentlysimmeringwater.
    Letthechocolatemelt,andstiruntilsmooth.Dipthe
    topofeachbuninthechocolate,thentop 12 withthe
    choppedpistachiosandanother 12 withthesprinkles.
    Leavetherestplain.
    6 Tomakethewreath,arrange 14 bunsina circle,
    alternatingthetoppings.Place7 insidethecircle,
    thentopthewreathwiththerest.Decoratewithwafer
    daisies,flowersandminieggs.Enjoywithin2 hours.
