    a smoothedge;2 largebaking
    sheetslinedwith compostable
    baking paper


1 Putthebutterina largemixing
bowlwiththecastersugarandmix
witha woodenspoonuntilfully
combined.Addbothflours,thesalt
andlavenderessence,thenmix
again to roughly bring together for

aminuteorso.Useyourhandsto
brieflykneadandbringthedough
together.Shapeinto2 fatdiscs,
wrap,thenchillforaround1 hour
untilfirm(seeMakeAhead).
2 Oncefirm,letthedoughsoftenout
ofthefridgeuntilpliable(about 10
minutes),thenrollouta doughdisc
ona lightlyflouredsurfaceto0.5cm
thick.Stampoutasmanyroundsas
youcan,thenremovethetrimmings
butdon’tmovethebiscuits.Brush
thetopsofthedoughcircleswith
a verysmallamountofmilkeach,
thencarefullysnipthestalksoffthe
edibleflowersashighasyoucan
withoutmakingthemfallapart–
theyneedtolieonthebiscuitsas
flataspossible.Gentlypress2 or 3
intoeachround(youcanpullsome
intopetalstomixthingsup,if you
like),thenscattereachbiscuitwith
afewdriedlavenderflowers.
3 Onceyou’vedoneallthebiscuits,
placea sheetofcompostablebaking
paper,bigenoughtocoverallthe
dough,overthetop.Gentlyroll
a rollingpinbackandforthoverthe
biscuitsa fewtimessotheflowers
arepressedintothedough.Be
careful– youshouldbeaimingto
keeptheshapeofthebiscuitsas
muchasyoucan.Removethe
bakingpaper,thenusethecutterto
re-stampthebiscuitshapesoutof
thedough.Carefullytransferthe
biscuitstooneofthebakingsheets,
thenchillforaround 20 minutes
whileyoudothenextbatch.
4 Heattheovento170°C/150°C fan/
gas3½.Re-rollthebiscuit
trimmingsandrepeattheprocess,
then,whenthefirstlotofdoughis
toosmalltore-roll,usethesecond
disc.Bakethechilledbiscuitsfor
15-20minutesuntiltheshortbread
isa uniformpalecolourandthe
edgesarecrisping.Removeeach
batchfromtheoven,coolonthe
bakingsheetfor5 minutes,then
transfertoa wireracktocool
completely.Scatterwithsugar,then
serveorboxup(seeMakeAhead).
