- 5 mediumfree-range eggs,
separated- 250gcastersugar
- Dashwhite wine vinegar or lemon
juice - 2 tbsppoppyseeds
- 200gplainflour
- Handfulelderflowerblossomsto
decorate, when in season (optional)
FORTHEFILLING
- 400mldoublecream
- 100gcastersugar
- 75mlelderflowercordial
- 500gstrawberries, hulled and cut
into quarters

1 Heattheovento200°C/180°Cfan/
gas6.Ina largebowl,whisktheegg
yolkswithhalfthesugaruntilfoamy.
2 Inanotherbowl,whisktheegg
whiteswiththevinegar/lemonjuice
untilfrothy,thengraduallyaddthe
restofthesugarandkeepwhisking
untilyouhavesoftpeaks.
3 Ina thirdbowl,mixthe poppy
seedsintotheflour.
4 Addthewhiskedeggwhitestothe
eggyolkmixture,startingwithone
bigspoonfultoloosentheyolk
mixture.Confidentlyfoldintherest
oftheeggwhitesapartfrom2 large
spoonfuls.Witha spatula,foldin
theflourandpoppyseeds,thenthe
lastoftheeggwhites.Pourthe
batterintothetinandbakefor
40 minutesoruntila skewer
pushedintothecentrecomesout
clean.Putona wireracktocool.
5 Meanwhile,forthefilling,whipthe
creamandsugartosoftpeaks,
takingcarenottoover-whip.
6 Easethecooledcakeoutofthetin,
thencutinhalfhorizontally.Drizzle
thecordialoverthecutsides.
Sandwichtogetherwithhalfthe
creamandhalfthestrawberries,
thenspoontheotherhalfofthe
creamonthetop.Scatterwiththe
remainingstrawberriesand,if you
cangetholdofsome,elderflowers.

Don’teatit yet,though:coverwitha
cleanteatowelandleavetorisefor
1½-2hoursoruntildoubledinsize.
3 Pinchoff50gpiecesofdoughand
gentlyrolloutto12cmcircleswith
a rollingpin.Put2 tbspfillinginthe
centreofeach,thenbringthedough
uparoundthefillingandpinchit
closedwithyourfingers.Placethe
bunsnexttoeachother,seamside
down,ona bakingtraylinedwith
bakingpaper(they’llmergeasthey
rise).Coverwitha cleanteatowel
andleavetoprovefor 30 minutes.
4 Heattheovento200°C/180°Cfan/
gas6.Brushthebunswiththeegg,
thenbakefor20-30minutesuntil
goldenbrown.Servewarm.
