gnocchiforyears.I don’tmash
thepotatoes;I forkthemsothey
retainsomecharacterandform.
I’mservingthesecutepasta
dumplingswitha creamyrabbit
andtarragonsauce.It’soneof
thebestthingsI’veevermade,
butifyoucan’tgetholdofwild
rabbityoucandosomething
similar with chicken.

MAKE
AHEAD

Maketherabbitandsauce
upto2 daysahead,then
chill,covered,untilready
toreheat.Shapethegnocchi,cover
witha cleanteatowel,thenchillfor
upto4 hoursbeforecooking.

  • 2-3tbspoliveoil

  • 150gunsmoked streaky bacon
    lardons

  • 2 tbspplainflour

  • 1 wildrabbit,jointed(see
    Know-howandGill’stip)

  • 1 largeor 2 small onions, thinly
    sliced

  • 3 garliccloves, finely sliced or
    grated

  • 2 freshbayleaves,torn

  • 1 glassdrywhitewine(175ml)

  • 200mldoublecream

  • 4-6freshtarragonsprigs,leaves
    pickedandroughlychopped

  • Handfulfreshflatleaf parsley,
    roughlychopped

  • Knobofbutter

  • Dressed green salad to serve


FORTHEGNOCCHI


  • 500gnewpotatoes,scrubbed

  • 200gplainflour,plusextratodust

  • 75ghardsheep’sorcow’scheese,
    finelygrated,plusextratoserve

  • 1 tbsp finely chopped chives


1 Heata largeheavy-basedpan
(witha lid)overa mediumheat.Add
a dashofoil,thenthelardons.Cook
gentlyonallsidesuntilgolden.Lift
thelardonsoutontoa plateand
adda dashmoreoiltothepan.
2 Seasontheflourwithsaltand
pepper,thentosstherabbitpieces
init tocoat.Shakeoffanyexcess,
thenaddtothepan.Frytherabbitin
thebaconfatuntilit’slookinglovely
andgoldenonallsidestoo.Liftit
outandsetasidewiththebacon.
3 Addtheonion/s,garlicandbay
leavestothepanandcook,stirring
occasionally,for8-10minutesor
untiltheonionsaresoft.Returnthe
baconandrabbittothepan.Pourin
thewineandjustenoughwaterto
coverthemeat(about350ml),then
bringtoa simmer.Puta lidonthe
panbutleaveit justajartoletsome
steamescape,turntheheatright
downandcookforabout2 hours.
4 Meanwhilemakethegnocchi.Put
the potatoes in a pan with salted

potatoesfromtheoven,coatthefish
piecesinthelemonygarlickyoil,
thenarrangeskin-sideup,onand
aroundthespuds.Roastfor8-10
minutesmoreoruntil the fish is just
cookedthrough.
6 Removethetrayfromtheoven.
Spoonthepestooverthepotatoesin
generousdollops,thenscatterwith
theshavedpecorinoandrocket.
Servethewholetrayatthetable.

untiltender(15–25minutes),then
drainandleavetosteamdry.
5 Tipoutthepotatoesontoa clean
worksurfaceandusea pairofforks
toroughthemup– don’tmash,just
chopandforkthepotatoes.This
helpsgivethegnocchia little
texture.Scatterovertheflour,then
thecheeseandchives,andseason
withplentyofsaltandpepper.Using
yourhands,gentlybringtogether to
makea firm,warmdough.
6 Kneadgentlyfora fewminutes,
thendividethedoughinto4 equal
parts.Useyourhandstorollout
eachquarterintolongcylindrical
lengthsabout2cmthick.Cutthe
lengthsinto2-3cmpiecesand,as
youpickthemup,givethema gentle
pinch.Laythegnocchiona lightly
flour-dustedtray(seeMakeAhead).
7 Removethelidfromthepan.The
meatshouldfeelverytender.Using
a pairoftongsora slottedspoon,
lifttherabbitpiecesoutofthe
sauceontoa plate,butleavethepan
ontheheat.Stirinthecream,bring
backtoa simmerandcookfora
further15-20minutesoruntilthe
mixturehasthickenedandreduced
totheconsistencyofa richsauce.
8 Whentherabbitiscoolenough,
pullthemeatfromthebonesand
returnit tothecookingsaucewith
thechoppedherbs.Seasontotaste
withplentyofsalt and pepper (see
MakeAhead).
9 Whenyou’rereadytoservethe
dish,bringa largepanofsalted
watertotheboil.Dropthegnocchi
intotheboilingwaterandcookfor
2-3minutesoruntiltheyrisetothe
surface.Carefullyscoopoutallthe
gnocchiusinga slottedspoonand
putthemina warmedbowlwiththe
knobofbutter,a trickleofolive oil
andsomesaltandpepper.
10 Dividethegnocchiamong
warmedbowls.Warmthroughthe
rabbitandsauce,thenspoonit over
thegnocchi.Servewithmoregrated
cheeseanda dressedgreensalad.
