Easy,manageablerecipeshavebeenthe

lifebloodofourfamilykitchenforthepast

coupleofyears,sinceourtwolittleboyscame

onthescene.TheywereborninCalifornia,

wherewewerelivinguntilrecently,and

becausewedidn’thavethechildcaresupport

networkoffamilycloseby,a simplified

approachtomealtimesbecameessential.

I havea new-foundrespectforrecipesthat

don’trequiretoomanyingredientsand can

bemadeinthebonesof 30 minutes.

Wecookdifferentlythroughouttheseasons

ofourlivesand,althoughI sometimesdreamof

thedayswhenI potteredaroundthekitchen

workingona homemadepastaprojectwhile

shinsofbeefslowlybubbledawayina tomato

sauce,that’snotwhattimeallowsatthemoment.

California,thechancetofillourtwoboys

withthefoodandthefondmemoriesofmyIrish

childhoodiswhatI’mlookingforwardtomost.
