1 Putthecondensedmilk,cream
and vanilla in a mixing bowl,

thenuseanelectricmixerto
beatuntilthick.Scrapeintothe
loaftin/container,cover,then
freezefor6 hoursorovernight.
2 Next,maketheshortbread.
Heattheovento160°C/140°C
fan/gas3.Puttheflourand
butterina mixingbowl,then
rubtogetherwithyourfingertips
untilthemixtureresembles
breadcrumbs.Stirinthesugar,
thenmixuntilit comestogether.
Tipintothecaketin,lightly
pressdownwiththebackof
a spoontolevel,thenbakefor
25-30minutesuntilpaleand
sandytothetouch.Scoreinto
8 fingers,thencoolin the tin
(seeMakeAhead).
3 Forthesauce,whizzthe150g
choppedstrawberriesina mini
foodprocessor(orusea stick
blender)withthecassisuntil
smooth.If youdon’twantseeds,
pushthepuréethrougha sieve
withthebackofa spoon.
4 Toassemble,drizzle1 tsp
sauceinto6 sundae/wine
glasses,crumbleinsome
shortbread,topwithicecream
andquarteredstrawberries,
thenrepeat,drizzlingthe
remainingsauceontop.
