Roast500gmixedwholeradishes,
tossedwith30gbutterand2 finely
choppedanchovies,ina hotovenfor
15-20minutes.Seasonwiththezest
andjuiceof½lemon,a handfulof
freshlychoppedparsleyandfreshly
milledblackpepper.Serveasa side
dishforroastchickenorfish.

EASYPICKLEDRADISHES
Trimandfinelyslice175gradishes,
thenputina bowlwitha little
freshlygratedginger.Toast1 tsp
corianderseedsina drypan,then
add2 tspcastersugar,4 tbspwhite
winevinegarand½tspsalt.Simmer
gentlytodissolvethesugar.Remove
fromtheheat,stirintheradishes,
thenleavetocool.Putina sealed
containerandchillovernight.Serve
withpâté,seafoodortacos.

EASYCOURGETTEFRITTERS
Ina bowl,mix3 choppedcourgettes,thezestof½lemon,4 tbspsparkling
water,60gplainflour,3 largefree-rangeeggs,50ggratedparmesan
and1 tspchoppedfreshmintleaves.Heat1cmvegetableoilina pan,then
addspoonfulsofthemix,flattenslightly,thenfryin2-3batchesfor3-4
minutesoneachsideuntilcookedandgolden.Servescatteredwithsalt,
moremint,thezestoftheother½lemonanda squeezeoflemonjuice.

GRILLEDCOURGETTESALAD
Slice2-3courgetteslengthways0.5cmthick.Arrangeona grillpan,then
brushwithoilandseason.Grillfor3-5minutesonhigh,thenturnand
repeat.Spread150gthickgreekyogurtona platter,thentopwiththe
grilledcourgettes.Scatterover100gslicedpittedkalamataolives,
choppedherbs,finelygratedlemonzestand100gcrumbledfeta.

COURGETTELOAFCAKE
Grate1 courgette,putina colander,leavefor5 minutes,thensqueezeout
theexcessmoisture.Ina mixingbowlbeat75gsoftenedbutter,75grunny
honey,75gcastersugar,1 tspvanillaextractand2 mediumfree-range
eggsuntilsmooth.Ina separatebowlcombinethegratedcourgettewith
190gself-raisingflourand40groastedchoppedalmonds.Foldinthebutter
mixture,2 tbspnaturalyogurtandthejuiceof½lemon.Spoonintoa 900g
greasedandlinedloaftinandbakeat180°C/160°Cfan/gas4 for 50 minutes
oruntila skewerpushedintothemiddlecomesoutclean.Coolinthetin
for 10 minutes,thenturnoutandcoolona wirerack.Enjoywitha cuppa.

GRILLEDWITHMISO
Ina smallbowl,mix1 tbspmisowith
1 tbspoliveoiland1 tbsphoney.Quarter
2 aubergines,thenbrushalloverwith
themisomixtureandgrillonmedium-
highfor 15 minutes,turning,untilgolden
brownandtender.Servewithrice.

Finelyslice2 auberginesintothin
batons,tosswith1 mediumbeatenegg,
thentosswith4 tbspfinepolenta.
Layina singlelayerona largelined
bakingtray,thenbakeat220°C/
200°Cfan/gas7 untilgoldenand
crisp.Servewithgarlicky
mayonnaisefordipping.

SMOKYAUBERGINEDIP
Brush1 auberginealloverwithoil,then
grill,turning,for 25 minutesuntilcharred
andsoftened.Cool,thencutopen,scoop
outthefleshintoa bowlandmixwith
a largepincheachofsmokedpaprika
andcumin,a dollopofgreekyogurt
andseasoning.Servewith
warmpittasand
crudités.

SUPER-VERSATILE ROAST TOMATOES
Put 400g roughly chopped tomatoes on
a roasting tray and toss with 2 fat garlic
cloves, sliced, and 6 tbsp extra-virgin
olive oil. Roast for 45 minutes at 180°C/
160°C fan/gas 4. Drizzle over 2 tbsp thick

balsamic vinegar, then cool. Stir in a
handful of torn basil leaves and season.
Serve on a platter with burrata or
mozzarella, stir into cooked pasta or
whizz with a stick blender and loosen
with hot veg stock to make great soup.
