It’s harvest time! The trees are laden with apples and pears, the last of the chillies
andcornhaveripened – and we always have too many soft herbs knocking
around Gotlotsto use up? Our food team have simple, useful, savvy ideas

SOFTHERBS
HERBYFRIT TATA
Whisk40gplainflourwith100mlmilkuntilsmooth,thengradually
beatin4 largefree-rangeeggs. Add60ggratedcheddar(veggie
if needbe),asmallhandfuleachofchoppedparsley,coriander
andtarragon,1 tspchoppedchivesandplentyofblackpepper.
Stirtocombine.Heataknobofbutterina heavy-basedfryingpan
untilmelted,pourinthemixture,thencookovera lowheatfor
8 minutesoruntilthetopandsideshavejustset.Turnoutonto
a plate,theninvertbackintothepanandcookfor2-3minutes
untilset.Servewitha greensaladdressedwithlemonandoil.

CHEESYPESTOPUFFS
Unrolla320gsheetofpuffpastryandcutinto4 equalrectangles.
Setona bakingtraylinedwithcompostablebakingpaperand
scorea 1cmborderaroundtheedgeofeach.Mix150gGarlicand
HerbsBoursinwith4 tbspchoppedsoftherbs(amixofbasil,
tarragonandchiveswouldbegood,butusewhateveryoufancy),
1-2tbspmilkandplentyofblackpepper.Divideamongthe
4 pastrybases,thentopwitha fewslicesofcooked
beetroot. Bakeat220°C/200°Cfan/gas6 for 20 minutes
untilgoldenandpuffed,thenservewithrocketsalad.

USE-IT-UPMARINADE
Bash1 tspfennelseedsina pestleandmortar,then
add5 tbspfreshlychoppedsoftherbs(basil,
parsley,coriander,dillandoreganowouldworkwell)
tomakea paste.Drizzlein200mloliveoil, mixin
allthetime,thenadd2-3tbspwhitewine
vinegarandsomeseasoning. Pourover
oilyfish,chickenorfeta,
marinateinthefridgefor
upto 12 hours,thenbake/
grilluntilcookedthrough.

argebowl.Finely
1 redand1 yellow
n addtothebowl
with 1 tsp dijon mustard,3 tbspmayonnaise,200g
crumbled blue cheese andahandfuloftoasted
chopped walnuts. Mix, thenservewithgrilledmeat.


BACON AND SIZZLING FRUITPANCAKETOPPER
Fry 4 streaky bacon rashersuntilcrisp,removefrom
the pan and set aside. Coreandfinelyslice1 eating
apple and 1 pear, then addtothepanwithaknobof
butter. Cook until the slicesaregoldenoneachside,
then serve with pancakes,thecrispybaconand
a drizzle of honey or maplesyrup.


CINNAMONANDGINGERSPICEDLOAFCAKE
Mix 150g softened butter, 150gcastersugar,
3 medium free-range eggs,200gself-raisingflour,
½ tsp ground cinnamon, ½tspgroundgingerand
a pinch of salt for 3-4 minutesuntilsmoothand
combined. Peel, core and roughlychop1 appleand
1 pear, then add to the mixalongwith3 tbspplain
yogurt. Mix until just combined,thenscrapeinto
a loaf tin lined with compostablebakingpaperand
bake at 180°C/160°C fan/gas4 for55-60minutesuntil
a skewer pushed into the centrecomesoutclean.
