- 1 largefree-rangeegg,beaten
- ½tspvanillaextract
- 125mlbuttermilk
- Sunfloweroilforcooking
- 1 tspgroundcinnamon
- 3 largebananas (or 8 mini/baby
bananas) - 6 tbspmaplesyrup
- 4 tbspsaltedpeanuts,chopped
- Double cream to serve (optional)

frying pan; foil
1 Melt25gofthebutterina small
saucepan.Sifttheflourandbaking
powderintoa bowlandstirinhalf
thesugar.Makea wellinthemiddle
andaddtheegg,meltedbutterand
vanilla.Graduallybeatinthe
buttermilkuntilsmooth.
2 Heatthefryingpanonthe
barbecue/fire.Pourina drizzleof
sunfloweroiland,whenhot,add
2 tbspofthebattertoforma 5cm

cooks).Repeatforasmanypancakes
aswillfitinthepan.After2-3
minutes,whenbubblesappearon
thesurface,flipthepancakesand
cookfor1-2minutesuntilfirmand
golden.Repeattomake8 largeor
12 smallpancakes,wrappinginfoil
andkeepingthemwarmasyougo.
