ForyearsI wantedtolove
kale,butI justcouldn’t.Eachbite
tastedlikehedgerow:stubborn
andspiky.Butasvoicesaround
theworldgrewinsupportofkale,
sodidmydesiretofinda wayto
maketheunlovablelovable.The
resultisthis:it’sa recipeforfour,
butI couldeasilyeatthewhole
thingmyself.Thekaleisblitzed
tosmithereens,thenbraised
untilsoft.Itstandsupasa ‘saag’
byitselfbutisallthebetterfor
some added fried paneer.


  • 400gkale,woodystemsdiscarded,
    leavesroughlychopped

  • 4 tbsprapeseedoil

  • 450ghard paneer, cut into 2cm
    cubes

  • 2 onions,finelychopped

  • 4 garliccloves,crushed

  • 2cmfreshginger,finelygrated

  • 2 greenchillies,finelychopped

  • 400gcanchoppedtomatoes

  • 1½tspgroundcoriander

  • 1½tspgroundcumin

  • ½tspground turmeric

  • 1 tspsalt

  • 1 tspbrownricesyrup(see

  • 400mltincoconutmilk

  • Wholemealchapatis or naan
    bread to serve

1 Whizzthechoppedkaleintolittle
bitsinthefoodprocessor.You’ll
probablyneedtodothisin2 batches
andstophalfwaythrougheachto
pushdownthebiggerbitswitha
spatulaorspoon.Transfertoa
largebowlandleavetooneside.
2 Ina largenon-stickfryingpan
(witha lid),heat2 tbspoilover
a mediumheat.Whenhot,addthe
paneercubesandfryfora couple
ofminutesoneachsideuntil
theyʼregoldenallover.Remove
toa plateandsetaside.
3 Putanother2 tbspoilintothe
samepanandsetbackover
a mediumheat.Whenhot,add
thechoppedonionsandcook
for 10 minutesuntilsoftenedand
sweet,thenaddthegarlic,ginger
andchillies.Cookfor5 minutes,
thenaddthetomatoes,stirring
everynowandthenfor8 minutes,
untiltheyʼvereducedtoa thick
paste.Addthecoriander,cumin,
turmeric,saltandbrown rice
syrupandmixwell.
4 Addthewhizzedkaletothepan
inbatches,stirringbetweeneach
handful.It mayseemasif thereis
toomuchkaleatfirst,butit willwilt
andcookdownquickly.Addthe
coconutmilk,stir,thencoverwith
thelid.Leavetocookovera low
heatfor 15 minutes,thenputthe
paneerbackintothepanandcook
foranother 10 minutes.If thesaag
seemsdryatanypoint,adda little
water,a fewtablespoonsata time.
5 Tastetocheckthattheflavours
havebeddedinandthekaleis
tenderbeforeyoutakeit offthe
heat.Servethekalesaagwithhot
wholemealchapatis or fluffy
naanbread.
