1 Putthechicken,garlic,pomegranatemolasses, lemon,
onions,Mediterraneanseasoning,oil,saltand some
blackpepperina mixingbowl.Coverandput in the fridge
tomarinatefor2 hours(orlonger– seeMake Ahead).
2 Heattheovento200°C/180°Cfan/gas6.Transfer the
chickenanditsmarinadetoa shallowroasting dish or tin,
thenroastfor40-45minutesuntilthechicken has turned
stickyandislightlycaramelised.
3 Combinetheherbsandpomegranateseeds in a bowl.
