1 Forthepastry,puttheflour,icingsugar
andgroundgingerina foodprocessor
witha pinchofsaltandpulsetocombine.
Addthebutterandpulsetoformfine
breadcrumbs.Ina bowl,beattheeggyolk
withtherumand1 tbspcoldwater(see
tip),addtotheflourmixture,thenpulse
untilthemixturebeginstocometogether.
It willbea littlesticky.(Ifyoudon’thavea
foodprocessor,useyourfingertipstorub
thebutterintothedryingredientsina
bowl,thenaddtheegg,rumandwaterand
combinequicklyuntilthemixturebeginsto
forma dough.)Turnoutontoa largesheet
ofclingfilm,bringthedoughtogetherwith
thesidesoftheclingfilm,thenwrapwell.
Shapeintoa discandchillfor1 hour.
2 Heattheovento200°C/180°Cfan/gas6.
Unwrapthepastrybutleaveit onthecling
film.Lightlydusta rollingpinandrolltoa
circleroughly28cmindiameterand0.5cm
thick.Looselyrollthepastryaroundthe
rollingpin(stillontheclingfilm),thenlift

intothetarttin,pastry-sidedown,and
pressintotheedges(throughthecling
film).Chillfor 30 minutes.
3 Tossthepumpkinwiththeoilina large
lippedbakingtrayandroastfor 20 minutes.
Drizzlewiththemaplesyrupandreturnto
theovenfor 10 minutes.Setasidetocool.
4 Removetheclingfilmfromthepastry
case,trimtheedgesofthepastry,then
lineit withbakingpaperandfillwith
ceramicbakingbeansoruncookedrice.
Bakefor 15 minutes,removethepaper
andbeans/rice(keepthericetouseagain),
thenbakefor5-10minutesuntilgolden,
dryandsandytothetouch.Setaside.
Turntheovento180°C/160°Cfan/gas4.
5 Meanwhile,putthespices,treacle,
sugarand400mlofthecreamina pan
overa mediumheatandwarmthrough,
stirring,untilthesugarhasdissolved
andthecreamisjuststeaming.
6 Whizzthepumpkin,rum(ifusing),eggs
andyolkinthecleanedfoodprocessor.
Addthespicedcreammixture,thenwhizz
untilsmoothandpourintothetartcase.
7 Bakefor30-35minutesoruntiljust
setwitha slightwobble.Whipthe
remainingcream,spoonontothepie,
thendustwithcinammontoserve.
