1 Heattheovento190°C/170°C
fan/gas5 andlinea 20cmsquare
tinwithnon-stickbakingpaper.
2 Meltthechocolateandbutter
ina heatproofbowlsetovera pan
ofsimmeringwater(don’tletthe
bowltouchthewater).
3 Ina largebowl,whisktheeggs
untilpaleandfluffy,thenaddthe
Billington’sUnrefinedDark
MuscovadoSugarandwhiskuntil
thick.Gentlyfoldinthemelted
chocolatemixture.
4 Siftintheflourandstiruntilthe
mixtureissmooth.Pourintothe
preparedtinandbakefor30-35
minutesuntilyouseea paper-like
crustontop.Thereshouldstillbe
somewobbleinthecentreofthetin.
