FORTHEDRESSING



  • 2 tbspsoysauce

  • Finelygratedzest and
    juice2 limes

  • 2 tbsptoastedsesameoil

  • 3cmpiecefreshginger,grated

  • 1 redchilli,deseededand
    finelysliced(reserve some
    to garnish)


1 Heattheovento220°C/
200°Cfan/gas7. Putthebroccoli
florets,cabbagewedgesand
onionsona largeroastingtray,
drizzleovera littlevegetable
oiland2 tbspsoysauce,season
withblackpepper, then roast for
15 minutes.
2 Meanwhile,mixallthe
dressingingredientsina bowl.
Afterroastingthevegfor 15
minutes,removetheroasting
trayfromtheovenandtossthe
vegetableswitha spatula.Make
4 spacesinthevegetablesfor
thefish,thenaddthesalmon.
3 Sprinkleoverthedressing
(mainlyoverthefishfillets),
thenreturntotheovenfor
10-12minutesuntilthefish
iscookedthrough(itwillflake
easilywitha fork)andthe
vegetablesarecrisp.Sprinkle
withslicedspringonionsand
thereservedchilli,thenserve
