lengthways - 2 springonions,sliced

bite-sizechunks - 1 tbspkormacurrypaste
- 2 tsp mango chutney
- 2 largevinetomatoes,chopped
- 1 tbspclottedordoublecream
- Squeezelemonjuice,plus a
lemonwedgetoserve - 1-2freshcoriandersprigs,
chopped,toserve - Steamedriceandpoppadums
(optional) to serve
1 Heattheoilina non-stickfrying
pan,addtheshallotsandfryfor3-4
minutestobrown.Addhalfthespring
onionsandfryfor1-2minutesmore.
2 Stirinthechicken,kormapaste,
mangochutneyandmostofthe
chopped tomatoes. Fry for a few
minutes,thenadd125mlfreshly
boiledwater.Simmerfor 10 minutes
untilthechickeniscookedthrough.
3 Stirinthecream,thentaste,adding
a littlelemonjuicetosharpenthe
flavour.Ina bowl,mixtheremaining
tomatoes,springonion,coriander,
morelemonjuice,saltandpepper.
4 Servethecurrywitha lemon
wedge,steamedriceand
poppadums(ifyoulike),withthe
freshtomatosaladscatteredontop.
