gas7. Bringa largepanofsalted
watertotheboil.Reducetheheatto
a simmer,thencookthepotatoesfor
10-12minutesoruntilthepointofa
sharpknifeslipsineasily.Drainwell.
2 Meanwhile,maketheguacamole:
boilthepeasfor2 minutesina pan
ofsaltedwater.Drainthepeasand
whizzwiththeremainingguacamole
ingredients– youcandothisina
miniblenderorina bowlusing
a stickblender.Adda littlewater
if youneedtoloosenthemixture,
thenseasonwellandsetaside.
3 Putthecookedpotatoesina
casseroleorroastingtin.Crush
gentlywiththebackofa spoon,then
drizzleovertheoliveoil,crumble
overthefetaandsprinklewithhalf
thesumac.Roastfor 10 minutes,
thenremovethecasserole/tinfrom
theovenandsetthesalmonontop.
Sprinklewiththeremainingsumac
andreturnthedish/tintotheoven
for10-12minutesmore, or until the
fishisjustcooked.
