  • 750gnewpotatoes

  • 2 tbspextra-virginoliveoil

  • 100gfetacheese,crumbled

  • 1 tbspsumac(seeEasySwaps)

  • 4 x 120gsustainablesalmon
    orwhitefishfillets

  • Gratedzest1 lemon, reserving
    fruit for serving

  • 500gfrozenpeas

  • 4 tbsphalf-fatcrèmefraîche
    (orfull-fatif youprefer)

  • Juiceandzest1 lime

  • Handfulfreshmintleaves, plus
    a few extra to garnish


1 Heattheovento220°C/200°Cfan/
gas7. Bringa largepanofsalted
watertotheboil.Reducetheheatto
a simmer,thencookthepotatoesfor
10-12minutesoruntilthepointofa
sharpknifeslipsineasily.Drainwell.
2 Meanwhile,maketheguacamole:
boilthepeasfor2 minutesina pan
ofsaltedwater.Drainthepeasand
whizzwiththeremainingguacamole
ingredients– youcandothisina
miniblenderorina bowlusing
a stickblender.Adda littlewater
if youneedtoloosenthemixture,
thenseasonwellandsetaside.
3 Putthecookedpotatoesina
casseroleorroastingtin.Crush
gentlywiththebackofa spoon,then
drizzleovertheoliveoil,crumble
overthefetaandsprinklewithhalf
thesumac.Roastfor 10 minutes,
thenremovethecasserole/tinfrom
theovenandsetthesalmonontop.
Sprinklewiththeremainingsumac
andreturnthedish/tintotheoven
for10-12minutesmore, or until the
fishisjustcooked.
4 Servewiththepeaguacamoleand
lemonwedges,sprinkledwith
lemonzestandextramintleaves.
