LINGUINE
Cook 150g linguine
according to the packet
instructions. Fry 250g
sliced mushrooms in
a splash of oil until golden, then reduce
the heat and add 75g garlic and herb soft
cheese with 6 tbsp single cream. Stir until
melted, then stir in the cooked linguine
to coat, adding a splash of pasta cooking
water if needed. Sprinkle with chopped
parsley and grated parmesan to serve.

CELERIAC AND PANCETTA SOUP
Heat a glug of oil in a large pan, then fry a
grated onion until softened. Add 1 crushed
garlic clove and ½ tsp each ground cumin
and ground coriander. Fry for 1 minute.
Stir in 1 diced celeriac and 1 large diced
floury potato, then pour in 1 litre stock to
cover. Bring to the boil, then simmer for
20 minutes until the veg are cooked. Whizz
until smooth, stir in 100ml single cream,
season well, then scatter with crispy
pancetta pieces to serve.
