airtight container for up to 3 days.


  • 1.2kgpumpkin,peeledandseeds
    removed,cutintolargewedges

  • 5 tbspextra-virginoliveoil

  • ¼tspchilliflakes,plusextra to serve

  • ¼tspsmokedpaprika

  • ½tspgroundcumin

  • ½tspgroundcoriander

  • 1 garlicbulb, separated into unpeeled
    cloves

  • 2 onions,finelychopped

  • 1.25litreshotvegetablestock

  • Finely grated zest and juice 1 lemon

    • 2 tbspcurrants

    • Smallhandfuleachfreshflatleaf

1 Forthedukkah,toasttheseedsfor
a fewminutesina dryfryingpan.Cool,
thencrushina pestleandmortar(orin
a jugwiththeendofa rollingpin),and
transfertoa bowl.Toastthemacadamias
inthesameway,thencoolandchop
beforeaddingtothebowlofcrushed
seedsalongwiththethymeleaves
and salt. Set aside (see Make Ahead).

2 Heattheovento180°C/160°Cfan/gas4.
Tossthepumpkinina largeroastingtray
with3 tbspoftheoil,thespicesandthe
wholegarliccloves.Season,thenroastfor
45-50minutesoruntilthepumpkinis
cookedandthegarlicissoft.Squeezethe
garlicfleshoutoftheskins over the
pumpkin.Setaside.
3 Heattheremaining2 tbspoilina large
saucepansetovera medium-highheat.
Addtheonionsandcook,stirring
occasionally,for10-12minutesoruntilthe
onionshavesoftened.Addthepumpkin
mixtureandstock,thencoverandcook,
stirringoccasionally,for15-20minutes.
4 Removefromtheheatandusethestick
blendertowhizzuntilsmooth.Season,
thenstirinthelemonzestandjuice.Divide
thesoupamongwarmedservingbowls,
thenscatterwithextrachilliflakes,
currants,herbsandsomedukkah.Add
a dollopoflabnehoryogurttoserve.
