Makethesauceuptoa dayahead,
cover and chill. Reheat to serve.

- 25gcocoapowder,sifted
- 1 tsp vanilla extract

- 150mlwholemilk
- 150ml double cream
- 300gBournvillechocolate,
brokenintopieces - 1 tsp vanilla extract

puddingbasin,greasedandbase
linedwithcompostablebaking
paper;kitchenfoil;string;
heatproof plate or trivet
1 Putallthepuddingingredientsinto
a bowl.Beatwitha hand-held
electricwhiskuntilwellblended,
lightandfluffy.Spoonthemixture
intothelinedbasinandlevelthetop.
2 Cuta squareoffoilabout4cm
biggeroneachsidethanthetop
ofthebasin.Greasetheunderside
andmakea pleatinthemiddleof
thesquare.Putthefoilontopofthe
basin,pressaroundtheedges, then
tie with string to seal.
3 Putthesmallplateortrivetina
deeppan.Setthebasinontopand
pourinenoughboilingwatertocome
halfwayuptheside.Coverwitha lid.
Bringthewaterbacktotheboil,then
reducetheheatandsimmervery
gentlyfor1½-1¾hoursuntilthetop
ofthespongeisfirmtothetouch.
4 Forthesauce,heatthemilkand
creamuntiljustboiling,thenadd
thechocolateandvanilla.Remove
fromtheheatandstiruntilsmooth.
5 Carefullyremovethebasinfrom
thepanandtakeoffthefoil(see
MakeAhead).Loosentheedgeswith
a knife,theninvertontoa plateand
removethebowlandanypaper.Top
thepuddingwithwarmsauceand
servetherestalongsideina jug.
