1 Heattheovento200°C/180°Cfan/
gas6.Putthesoakedsunflower
seedsandstuffingmixina large

heatproofbowlandcoverwith
175mlfreshlyboiledwater. Stir
andsetaside.
2 Putthesoyaminceandstock
powderina largemixingbowl and
pouroverenoughfreshlyboiled
watertocoverwell,thenstir and
setasidefor 10 minutes.Drain
andsqueezeoutanyexcess water,
thenaddtothestuffingmix.
3 Heata panwith asplash of
oliveoil,thenfrytheonion over
a mediumheat,stirring,for
10 minutesuntilbrowned. Add
thegarlicandMarmiteand cook
for1 moreminute.Addtothe
stuffingbowlwiththeherbs and
mustard.Season,thenmix to
combineandsetasidetocool.
4 Turnoutthepastryontoa lightly
flouredsurface,thenrollto a rough
30cmx 35cmrectangle.Spoon
thefillinglengthwaysdown the
centre ofthepastry.Cutthe pastry
oneithersideofthefilling into
strips,atrightanglestothe filling,
allthewaydownthelength of the
filling.Alternatingfromside to side,
plaitthestripsoverthefilling to
createa latticeeffect.
5 Transferthewellingtonto a
bakingsheetlinedwithnon-stick
bakingpaper,brushwithsoy sauce,
thenbakefor30-35minutes. Slice
andservehot,atroomtemperature
orcoldwithcranberrysauce.
