    1 Heattheovento180°C/160°Cfan/gas4.Grease2 x 20cm
    victoriasandwichtinswithbutterandlinewithcompostable
    bakingpaper.Ina largemixingbowl,beatthebutter,caster
    andmuscovadosugarsusinganelectricmixeruntillightand
    fluffy,thenwhiskintheeggsoneata time,addingthevanilla
    extractwiththelastone.Beatintheflour,thendividethe
    mixturebetweenthecaketinsandbakefor 25 minutesuntil
    goldenincolouranda skewerpushedintothemiddlecomes
    outclean.Removefromtheovenandallowtocool,before
    turningontoa wireracktocoolcompletely.
    2 Tomakethebuttercream,beatthebutterina largebowl
    withanelectricmixeruntilpaleandfluffy.Addhalftheicing
    sugarandcombine,beforeaddingtherestandbeatingagain
    untillighterincolour.Mixinthecocoawitha littlemilkto
    loosen,if needed.
    3 Whenthespongesarecool,putoneona servingplate
    orcakestandandspreadwith6 tbspofbuttercream.
    Puttheotherspongeontop,thenspreadwiththerestofthe
    buttercream,smoothingdownthesidestocovercompletely.
    Swirlthetopwitha paletteknifetoresembletheinsideof
    a log.Putinthefridgetoset.
    4 Take50gofthewhitefondanticingandmake6 varying
    sizedbasesforthetoadstools.Next,roll6 piecesofthered
    fondantintodifferentsizedballs,thenflattenslightlyand
    pressoutthesidestocreatetoadstoolcaps.Popthemon
    topofthebases,beforemakinga fewtinywhiteballsto
    pressontothetoadstoolsasspots.
    5 Linea largebakingtraywithcompostablebaking
    paper.Putthedarkchocolateina microwavablebowland
    microwavein 30 secondburstsuntilmelted.Usinga paint
    brush,paintthechocolateontothepaper,roughlydrawing
    lines,ringsanddotstoemulatethelookofbark.Leaveto
    chillinthefridgewhileyoumeltthewhitechocolateusing
    thesamemethodasbefore.
    6 Whenthewhitechocolatehascooleda bit,pourit overthe
    paintedbakingpaperandgentlyspreadwitha paletteknife
    soit’sroughly36cmx 25cm.Leavetosetcompletely.Once
    set,cutinhalflengthways,thencuteachhalfinto7 rectangles
    (14piecesintotal).Placethebarkaroundthesideofthecake,
    puttingthetoadstoolsanda fewgreen
    rosemary/pinesprigsontop.
