thebutterina bowluntilevenly
combined,thentipintotheprepared

thebase.Chillfor 30 minutes.
2 Spoonthemincemeatoverthe
biscuitbaseandspreadevenlyto
cover,thenreturntothefridgewhile

andmixusinganelectricmixeruntil
smoothandthick.Whiskintheeggs,

gas4.Pourthemixtureoverthe

trayandbakefor55-60minutesuntil
setattheedgeswitha wobbleinthe
middle.Turnthecheesecakeround
halfwaythroughsoit coloursevenly.
Cool,coverandchillovernight.
5 Tomakethecandiedorangeslices,
heattheovento140°C/120°Cfan/
gas1.Sifthalftheicingsugarover
thepreparedbakingsheet,then
arrangetheorangeslicesina single
layeroverthetop.Siftoverthe
remainingicingsugarandsprinkle
witha fewdropsofwater.Bake
forabout1 houruntilgoldenand
caramelised.Carefullyliftthe
slicesoffthepaperandleaveto
coolona wirerackuntilready to
use(seeMakeAhead).
6 Forthespicedrumdrizzle,
puttheorangejuice,sugarand
3 tbspoftherumina panand
gentlyheatuntilthesugarhas
dissolved.Increasetheheatand
boilfor5 minutesuntilthemixture
hasthickenedtoa thinsyrup,then
removefromtheheatandstir
intheremainingrum.Set aside
tocoolcompletely.
7 Removethecheesecakefromthe
fridge 30 minutesbeforeserving.
Arrangethecandiedorangeslices
overthetophoweveryoulike,
servinganyextraontheside.Pour
overthedrizzleandslicetoserve.
