  • 1 smallpumpkin,peeled,
    deseededandsliced

  • 3-4freshthymesprigs

  • 500gspinachand ricotta tortellini

  • 100gbutter

  • 75gblanched hazelnuts, roughly
    chopped

  • 2 freshsagesprigs,leavespicked

  • Bestquality extra-virgin olive oil
    to serve


1 Heattheovento180°C/160°Cfan/
gas4.Putthepumpkinona large
bakingtraywiththethymesprigs
andsprinklewiththeoliveoil.
Seasongenerouslywithseasaltand
groundblackpepper,thenroastin
theovenfor 40 minutesoruntil
tenderandcaramelisedatthe
edges.Oncecooked,keepwarm.
2 Towardstheendofthepumpkin
cookingtime,bringa largepanof
watertotheboilandseason
generouslywithsalt.Onceboiling,
addthetortelliniandcookuntil
tenderbutstillwithsomebite.Drain
andreservea cupofthestarchy
cookingwatertouseinthesauce.
3 Whilethepastacooks,puta large
heavy-based frying pan over a


low-mediumheatandaddthe
butter.Addthehazelnutstothepan,
tossingtocoatthemevenlyinthe
warmbutter.Cookfor4-5minutes
untilthehazelnutshavetoasted.
Stirinthesageleavesandallowto
toastinthegoldenbuttermix.
4 Tosstheroastedpumpkinand
tortelliniintothepan,addinga
splashofreservedpastacooking
water to loosen, if needed.

5 Servethepastaonwarmed
plates.Crumbleoversomeblue
cheesealongwitha generous
drizzleofthebestqualityextra-
virginoliveoilyouhavetohand.
Finishwitha sprinkleofsaltand
agrindingofblackpepper.
