- 1.4kgwholebeeffillet(seetip)
- 6 freshbayleaves,plus2 extra
sprigsorseveral leaves to roast
andserve - 1 tbspseasaltflakes
- 1 tbspfreshly ground black
pepper - 2 tbspoliveoil
- 20gunsaltedbutter,chopped
- 50gwholegrainmustard
- 130g black treacle
- 2 tsp sherry vinegar

1 Putthegreasedroastingrack
onthepreparedbakingtray.Use
kitchenstringtotrussthemeat,
tyingit at3cmintervals.Chopthe
6 bayleaves,putinthebowlofa
miniblenderorspicegrinderwith
thesaltandpepper,thenwhizz
untilfinelychopped.Coatthebeef
withthebayleafmixture,thenset
onthepreparedrack.Setaside,
covered,for1 hourto take the
chilloffthejoint.
2 Heattheoilina largefryingpan
overa highheat.Addthebeefand
cook,turning,for8 minutesor
untilbrownedallover,then return
themeattotherack.
3 Tomaketheglaze,returnthe
frying pan to a medium heat and
addthebutter,stirringuntilmelted.
Addthemustard,treacleand
vinegartothepanandstirto
combine.Bringtoa simmer,then
removefromtheheat.Lettheglaze
standfora fewminutestothicken
a little,thenpourit evenlyover the
beef(seeMakeAhead).

gas6.Tucka bayleafsprig(orsome
extralooseleaves)underthebeef
ontherackfora littleextraflavour,
transfertotheovenandroastfor
30-35minutesoruntila digitalprobe
thermometerpushedintothecentre
reaches54°Cformedium-rare,or
untilcookedtoyourliking:rarebeef
shouldread50°C,medium 60°C and
welldone70°C.
5 Removethebeeffromtheoven
andsetaside,looselycoveredwith
foil,torestfor10-15minutes,then
transferthemeattoa platter.Pour
anyrestingjuicesovertheroast
(discardanybitsthathavecaughtin
thetray).Servewithextrafreshbay
leaves,looseorina sprig,if youlike.
