1 Dissolvetheyeastandsugarina
littleofthewarmedmilkina cup.
Puttheflour,yeast/sugarmixture
andsaltina standmixerfittedwith
a doughhookorlargemixingbowl.
Add1 beatenegg,theremaining
warmedmilkandthebutter.If
usinga standmixer,mixona low
speeduntilcombined,thenturnup
thespeedtomediumandmixfor
another5 minutesuntilyouhave
a smooth,elasticdough.If mixing
byhand,usea round-bladeddinner
knifetomixtheingredientstogether
toforma dough,thentipoutonto
a lightlyflouredsurfaceandknead
byhandfor 10 minutesor until
smoothandelastic.
2 Leavethedoughinthebowl,cover
witha cleanteatowelandleavein
a warmplacetorisefor 45 minutes
to1 houroruntildoubledinsize.
3 Tipthedoughoutontoa lightly
flouredworksurface.Gentlyknead
onceortwicetoremoveanylargeair
pockets,thendivideandshapeinto
4 equalballsofdough(trytobeas
accurateasyoucan– youcanweigh
thedoughpiecestogetit right).
4 Rollouteachpieceofdoughintoa
circle,asif makinga pizzabase.The
doughmayspringbacka littleatfirst,
butpersistuntileachpieceis28cm
across,orthesamesizeasa dinner
plate(thecirclesneedtobevery
similarinsizeforthestartowork).
5 Lay1 doughcircleonthelined
bakingsheet,spreadwith1 tbsp
cranberrysauce,a sprinkleof
gratedcheeseanda fewthyme
leaves, then lay another dough circle

ontopandrepeatwiththecranberry
andgratedcheese.Putthe
camembertorotherroundcheesein
themiddleofthecircle,thenarrange
athirddoughcircleontop.Layer
withtheremainingcranberrysauce
andmostoftheremainingcheese,
thentopwiththefinaldoughcircle.
6 Gentlyshapethedougharound
theroundcheeseandpressdownto
removeanyairpocketsthen,using
a sharpknife,make4 cutsfromthe
edgeofthecheesetotheedgeofthe
doughcircle(imaginea clockface
andmakea cutat12,3,6 and 9
o’clock).Cuteachofthe4 segments
you’vecreatedinhalftomake8,
thenagaintomake 16 strands.
7 Pickup2 strandsofdoughnext
toeachother,liftandtwistone
strandclockwisetwice,thentwist
theotherstrandcounterclockwise
twicetoexposethelayers.Replace
thestrandsonthebakingsheet,
aligningthelayersandpinching
thestrandstogetherwherethe
layersmeetattheouteredgeofthe
strandstoforma point.Repeatwith
theotherstrandsaroundthestar.
8 Brushthestarwithmostofthe
otherbeatenegg,thenleavetoprove
inthefridge(seeMakeAhead)orat
roomtemperaturefor30-40minutes.
9 Heattheovento190°C/170°Cfan/
gas5.Brushthestarwitha little
morebeatenegg,thenbakefor
30 minutesuntilthebreadis golden
andbakedthroughandthecheeseis
oozing.Servestraightaway,dusted
withmoregratedcheeseandstrands
offreshthyme,if youlike(seetip).
