1 Tomakethecheesesauce,put
thesoftcheeseorbluecheese
andcreamina smallsaucepan
overa low-mediumheat.Cook,
stirringfrequently,for5-6minutes
untilthecheesehasmelted(don’t
letit boil).Usea stickblenderto
whizzuntilsmoothandcombined.
Seasontotaste,thencoverand
keepwarmuntilreadytoserve.
2 Forthefilling,adda splashof
oliveoiltoa 20cm(preferably
non-stick)fryingpanovera medium
heat.Addthemeatandcook,
stirringoccasionally,for4-5
minutesuntilit turnsgoldenand
startstobrown.Transfertoa plate
linedwitha pieceofkitchenpaper
tosoakupanyexcessfatandset
asideuntilreadytouse.Wipeout
thepanwithkitchen paper and
keeptohand.
3 Fortheomelette,whisktheeggs
ina bowlwitha pinchofsaltand
pepper.Heathalfthebutterinthe
wipedfryingpanovera medium-high
heatuntilmeltedandstartingto
foam.Pourinhalftheeggmixture,
thenstirinonedirection,shaking
thepanwithyourotherhandto
keepthemixturemoving.Usea
siliconespatulatopushtheedges
downtopreventthemdryingout.
Removefromtheheatwhenthe
eggisalmostcookedthrough(the
residualheatinthepan will finish
offthecooking).
4 Toptheomelettewithhalfthe
gratedcheese,halfthemeat
fillingandhalfthechoppedherbs.
Usethespatulatofolda thirdof
theomeletteontoitself,thenflip
it overtorollup.Puttheomelette
inthecentreofa warmplate,
drizzlewitholiveoil,thenadda
generousspoonfulofcheesesauce.
Repeatwiththeremainingegg
mixture,fillingandcheesesauce
tomakea secondomelette.
Sprinkleoverextrachoppedherbs
andsomefreshlyground black
peppertoserve.
