IT’S HARD TO BELIEVEanewyearisuponus
(letalonethatitis2019!).Februaryisthatuniquemix
of relaxed yet important – it’s a time for setting fresh
agendas, making plans, trying new things but also needing
tofeelrefreshed.Afteraseasonofexcess,wefeelreadyto
putthings right. Fortunately, there is much momentum
intheworldoffoodandtravelrightnowtoprovidethat
inspiration, and we’ve distilled these ideas into an issue
tohelpyouenjoytheyearahead.
Thismonth there are a lot of interesting discussions on the
table,andsustainabilityisattheforefront.Duringatripto
BryonBaywiththeteamatHarvestNewrybar,wehadthe
pleasure of foraging with the inspiring Peter Hardwick. He flagged the need to consume more
nativeingredientsandtoknowwhat’sedibleinourownbackyard,orbeach!Iwillnever
forget standing on the shore at Lennox Head, on the very spot where I used to holiday yearly
withmyfamilyasachild,whenPetergavemeseaweedtoeatthattastedlikeoyster!Hisideas
really challenged me to think differently; he believes the ‘succulent salad’ will be the NBT
(Next Big Thing), so check out his column and the recipe on page 40. Our chef and the
butcher (Colin Fassnidge and Anthony Puharich) feel strongly about upping our kangaroo
consumptionasasustainableformofmeat,andhavetransformedastir-frywiththislean,
high-proteinmeat(p44).ShannonMartinez,fromMelbourne’sSmith&Daughters,creates
a vegan Italian menu for us on page 82 that will blow you away. And for easy ways to reduce
food waste in the home, you’ll love our team’s take on savoury muffins and pasta salads, or
Matt Preston’s cover-worthy miso fritters.
Firedoor’s Lennox Hastie took us to Hamilton Island and cooked without electricity (his
signaturegrillsheatinguptheisland;p130).IvisitedRayavadeeinThailand’sKrabi,anentire
resortthatwasbuiltwithoutcuttingdownonetree(andwithedibleplantsandherbsgrowing
allthroughout the grounds; p 138). We’ve canvassed Sonoma’s wine region through to
