BASE MUFFIN RECIPE
MAKES6LARGEMUFFINS
Thisisthebaseforrecipesthatfollow.
Follow the preparation instructions in these
recipes,thenaddtobasemuffinmixture
and cook according to instructions.


185g unsalted butter, chopped,
softened
3 extra-large eggs
11 / 4 cups (310ml) buttermilk,
at room temperature
2 cups (300g) self-raising flour, sifted


Placebutterinastandmixerfittedwith
thepaddleattachmentandbeatuntil
pale. Add eggs and beat until combined.
Fold through buttermilk, flour and 1 tsp
salt flakes until combined.

CHORIZO&SMOKED
MOZZARELLA MUFFINS
MAKES 6

1x150gchorizo,casing removed,
finely chopped
2tbschoppeddill
1tspcarawayseeds,toasted
120g smoked mozzarella, coarsely
grated (substitute regular mozzarella)
50g semi-dried tomatoes, drained,
finelychopped

(^1) / 2 cup (125ml) buttermilk
Preheatoven to 180°C. Grease a 6-hole
Texasmuffinpan.Placechorizoina
non-stickfrypanovermedium-lowheat
andcook,stirring,for5-6minutesoruntil
golden.Drainonpapertowelandcool
completely.Foldchorizoandremaining
ingredients through base muffin mixture.
Season.Divideamongmuffinholesand
bakefor25-30minutesoruntilaskewer
inserted in the centre comes out clean.
