James Hird, a beer has long been on the
cards for the Sydney hospitality team.
“I’ve always wanted to do a beer,” says
Hird. “We’ve now done quite a few
collaborations, and beer was the logical
next step.”
But going it alone was never on the
cards. “It’s just another extension of our
relationship with different producers,”
explains Koludrovic. “We trust the experts
to help us create what we’re looking for.
