solution:mystir-fryoysterchicken,whichcanbewhippedupinasnaponeven
thebusiestofdays.Itisaneasyandflavoursomeoptionforlunchordinner–andall
you need to enjoy a taste of Asian comfort food. It is saucy, extremely aromatic and,
goodnews, a winner with kids, too.
Thespeedystir-frycookingmethodresultsintender,juicymeat.Andthechicken
smothered in oyster sauce with cashew and dried chillies is the perfect balance of
sweetand savoury.
Intenselyflavouredoystersauceisamust-haveonyourshoppinglist–itisamazing
whatthecomplexumaminotesofthissaucecandoforadish.I’veusedcarrotand
capsicumintherecipehere,butfeelfreetoreplacethemwithwhatevervegetables
youhaveonhand.Itwilltastewonderfulregardlessofhowyoualtertheingredients.
Getyourwokoutandgetcracking.Andifyoudon’thaveawok,don’tworry–you
canalwaysusealargefrypan.It’strulyawonderfulpleasuregobblingtheresulting
dish down with a bowl of warm jasmine rice. I’m sure it’ll become a staple in your
home once you try it.


OYSTER SAUCE CHICKEN WITH
CASHEW NUTS AND DRIED CHILLI
SERVES 4

600g skinlesss chicken thigh fillets,
cut into thirds

(^1) / 2 cup (125ml) oyster sauce
1 tspdarksoysauce
1tbssunfloweroil
2garliccloves,finelychopped
6cmpiece(30g)ginger,thinlysliced
6 dried long red chillies, broken in half
1 small carrot, thinly sliced
(^1) / 2 red capsicum, seeds removed,
chopped
1 tspsesameoil
Thinly sliced long green shallots, roasted
chopped cashews and cooked jasmine
rice, to serve
Combine the chicken, oyster sauce, soy
and1tspfreshlygroundblackpepperin
a bowl. Cover and stand for 10 minutes
to marinate.
Heatsunfloweroilinawokorlarge
frypan over medium-high heat. Add
garlic,gingerandchilli,andcook,stirring
regularly,for2minutesoruntilfragrant.
Increaseheattohigh,addchickenmixture
andcook,stirring,for6minutesoruntil
chickeniscookedthroughandlightly
charred. Add carrot and capsicum, and
cook, stirring occasionally, for 2 minutes
or until heated through. Stir through
sesameoilandremovefromtheheat.
Scatterwithshallotandcashew, and
serve with jasmine rice.
