“Ilikedoingtheomelette,”saystheMelbournechef,who,withastringofvenues
to his name, is no stranger to long hours and late nights. On top of being ready in
minutes, “it’s probably the healthiest dish”, he explains. The same could be said of
McConnell’stunapasta.“It’soneofthosethingswhereIalwayshavewhatIneedinthe
cupboard. It takes 10 minutes to put together the other ingredients, so by the time
thepastaiscookedyoucanquicklyknockitup.Withthebrownieandtheturnovers,
youcanhavethempreppedbeforehandandstoredinthefridgereadytogo.”
Ofcourse,whenyou’reenjoyingacoldbeerattheendofabigday,sometimes
theeatingisallaboutindulgence,and“fortheiroutrightunashamedunhealthyjunk
quality”,McConnell’sKoreanchickenwings–alsoperfectforpreppingahead–arehis
go-to. “It’s one of those things – some mates, some beer, some wings and we’re done!”
