amaranth, parsley, capers and lentils

Juice of^1 / 2 lemon, plus extra wedges
to serve
(^1) / 4 cup (60ml) extra virgin olive oil
6 mixed heirloom radishes, larger
oneshalved
1babyfennel,thinlysliced
(we used a mandoline)
(^1) / 2 cup each amaranth and flat-leaf
parsleyleaves
2 tsp Kolophon capers (substitute other
good-quality capers)
2KingGeorgewhiting,gutted,scaled,
butterflied (ask your fishmonger to
do this for you)
Placelentilsinasaucepan,coverwith
cold water and place over medium-high
