is where my children fill their baskets with Easter Bunny chocolates, and that led me
to bake this chocolate cake with a flavour twist.
Theresultismytraditionalwhitechocolateorangecakewithorangesyrup–asimple
recipe, requiring very few ingredients to satisfy your guests’ appetites for a sweet treat.
Thefullburstoforangeflavourmixedwiththewhitechocolateprovidesaperfect
balanceofsweetnessandpleasesthechocolateenthusiasts.Thiscakehitstheright
spotandisdefinitelyacrowdpleaser.It’sperfectforEaster– and every other day of
the year! We don’t need an occasion to eat cakes, do we?

WHITE CHOCOLATE ORANGE
CAKE WITH ORANGE SYRUP
MAKES 6

100g unsalted butter, softened,
plusextrameltedtogrease
100gplain flour, plus extra^1 / 2 cup (75g)
100gwhite chocolate
2eggyolks,plus2whole eggs
100g caster sugar
Finelygratedzestof1orange,
plus 2 tbs orange juice
Creme fraiche, to serve

ORANGE SYRUP
200ml orange juice
2 cinnamon quills

(^1) / 4 cup (55g) caster sugar
Preheatoven180°C.Brushsix^3 / 4 -cup
(180ml) ramekins with extra butter and
divide extra flour among them. Turn to
evenly coat inside of ramekins, then shake
outexcess.
Fillasmallsaucepanone-thirdfullwith
waterandbringtoagentlesimmer.Place
softened butter and chocolate in a small
heatproofbowloverpanandstiruntil
melted (don’t let the bowl touch the water).
Stand to cool completely.
Meanwhile,inastandmixerfittedwith
thewhiskattachment,whiskeggyolks,
eggsandsugarfor1minuteonhigh
speed or until thick and pale. Fold
chocolate mixture into egg mixture.
Fold through flour, orange zest and juice.
Divide batter among prepared ramekins
andbakefor30minutesoruntila
wooden skewer inserted in the centre
comes out clean. Stand for 10 minutes,
then invert onto a wire cooling rack.
Meanwhile, for the orange syrup,
combine all ingredients in a saucepan
andbringtotheboil.Boilfor10minutes
or until reduced by two-thirds. Remove
from heat.
Placecakesonservingplatesandtop
with syrup. Serve with creme fraiche.
