LEMON PATATES
SERVES 6

1.2kg Maris Piper potatoes (substitute
desiree), peeled, cut into wedges
2 garlic cloves, crushed
200ml extra virgin olive oil
Juice of 2 lemons
1 tsp fine semolina
1 tsp mountain oregano (substitute
regular dried oregano)

Preheat oven to 220°C. Grease a lipped
baking tray and line with baking paper.
Place all ingredients in a bowl with
150ml water and 1 tsp salt flakes. Turn
to coat potato.
Arrange potato mixture on the
prepared tray and bake for 40 minutes.
Turn potato mixture and return to the
oven for a further 30 minutes or until
completely tender, golden and crispy
on the outside. Shake pan occasionally
as potato mixture cooks to ensure potato
colours evenly. Serve immediately.
