ONEOFTHEBEST, andmostrewarding,trendsI’veseen

emergeoverthepastfewyearsis theriseofbaking.I know,you

maybethinkingthatbakinghasalwaysbeenpopular,andthis

is true.It’sbeenoneofmyfavouritethingsformyentirelife:the

smells,thetextures,thetastes,thecreativityandexploration,

aswellasa waytospendtime with my nanna, my mother and,

eventually,mychildren.

Whathaschanged,though,is theemergenceofaneclectic

andexcitingundercurrentofrenegadebakersdoingcreative,

interestingthings.Takingbakingtothenextlevel,yet

respectingtheprovenchemistryoftheages.Thinkthepunk

pink-mohawkedAnnaPolyviou,whousesgraffitiandhumour

asinspiration;orself-confessed‘sneakerhead’AndyBowdy,whomodernisedthetrifle.There

arethecornerbakersthatwentglobal:BourkeStreetBakeryre-energisedthesausagerolland

custardtart,andthentookNewYork;Lunemadethecroissantanartform;andBlackStar

Pastryputthestrawberrywatermelonlayercakeontheworldmap(selling16,000slicesa week

andcounting).KatherineSabbathgaveupteachingtobakefulltimeafterherfashionablecakes

wentglobal,andTivoliRoad’sMichaelandPippaJames put bread-making back on the agenda

beforetheymovedontoa newadventure(p64).

I lovethisfreshthinking,andtheyouthfulenergymixedwithtraditionthatis helpingshake

uptheold-fashionedconnotationsofbaking(justaskthismonth’scontributor,ThaliaHo,

behindthesuccessfulblogButter& Brioche).A wholenewgenerationis turningtoit,

celebratingandcollaborating.Nottomentionit hasbecometheultimatestress reliever

(hey,I’venevergottenintoyoga,butasforkneadingthedough,I’mthere).

Hence,thismonth,we’reintroducingandwelcomingyoutodelicious.BakeClub.Forfood
