ROASTEDTOMATORAGUWITH
CHEESYGARLIC BREAD

Usethisraguonpasta,asa pizzabase,or
simplyserveonitsownwithcheesy garlic
bread and great anchovies.


2kgmixedover-ripetomatoes,
coresremoved
1 garlicbulb,cutin halfhorizontally
2 cupsmixedleftoverherbs(weused
thyme,oreganoandrosemary)
1 redonion,slicedinto rounds
1 tbscastersugar


(^1) / 4 cup(60ml)redwinevinegar
(^1) / 2 cup(125ml)extravirgin olive oil
1 tspgroundcumin
(^1) / 2 tspchillipowder
Cheesygarlicbread(recipefollows)

1 baguette
60gunsaltedbutter,softened
2 garliccloves,crushed
Afewsprigseachthyme, oregano
androsemary
40gComtécheese(Frenchsemi-hard
cheese,fromgooddelis– substitute
Emmentalor Gruyere), coarsely
grated
Preheattheovento220°C.
Tomakeragu,placeallingredients
exceptgarlicbreadandanchoviesin a
roastingpanandtosstocombine.Cover
withbakingpaper,pressingdownonthe
surfaceofthetomatoes.Roastfor
20 minutes,removebakingpaper,then
roast,shakingthetrayevery 10 minutes,
fora further30-40minutesoruntilthick
andreduced.Removefromoven,allow
tocoolslightly,thenseasontotaste.
Forthegarlicbread,usinga bread
knife,cutslicespartwaythrough
baguette.Combinebutterandgarlicin
a bowl.Spreadgarlicbutterbetween
eachslice,thenfillwithherbsprigsand
cheese.Enclosein bakingpaperandfoil,
andplaceona bakingtray.Bakefor
10 minutesoruntilgoldenandcheese
andgarlicbutterhavemelted.Servewith
the roasted tomato and anchovies.

‘SHEPHERD’S’ PIE

Thisis reallya waytouseupleftover
grains,pulsesorbeans.If youdon’thave
leftoverrice,ornotenough,filloutwith
extravegiesoraddsomecannedlentilsor
beans.It’sa samosafillingrecipeadapted
to vegie and rice leftovers we use at home.
500gsweetpotatoes,chopped
600gflourypotatoes,chopped
100gunsaltedbutter,melted
2 tbsextravirginoliveoil
2 tspmustardseeds
1 tspeachcuminandfennelseeds
1 redonion,finelychopped
2 garliccloves,chopped
4cmpiece(20g)ginger,finely grated
1 tbsgroundcoriander
(^1) / 2 tspeachchillipowder and
groundturmeric
1 cupchoppedsilverbeet or
spinachleaves
2 cupscookedwhiterice
(^1) / 4 cupchoppedcoriander leaves
12 curryleaves
2 tomatoes,chopped
150g grated haloumi
Placesweetpotatoandpotatoin a large
steamersetovera saucepanofsimmering
waterandsteamfor 45 minutesoruntil
tender.Pushthrougha ricerintoa bowl
andbeatin butter.Seasonandset aside.
Preheattheovento220°C.
Heatoilin a largesaucepanover
mediumheat.Addmustard,cuminand
fennelseeds,andstirfor1 minuteoruntil
mustardseedsbegintopop.Addonion,
garlicandginger,andcook,stirring
constantly,untilsoftened.Addspices,
silverbeet,rice,200mlwater,coriander,
curryleavesandtomato.Cook,stirring
constantly,for2 minutes to coat the rice
inspices.Season.
Transferfillingtoa 2.5Lpiedish,spoon
mashedpotatoontop,thenscatterwith
gratedhaloumi.Coverwitha layerof
bakingpaperanda layeroffoil.
Bakefor 45 minutesoruntiltender,then
uncoverandbakefora further 40 minutes
or until golden and lightly charred on top.
BREAD& BUTTERPUDDING
MEETSBANANA SPLIT
SERVES 6-8
2 overripebananas
2 tbsbrownsugar
(^1) / 4 tspeachgroundcinnamon
andgroundnutmeg
(^1) / 2 cup(80g)sultanas
1 tbssoftenedunsaltedbutter
8-10leftoverthickwhiteslicesbread,
trimmed to fit 4-cup (1L) loaf pan
3 eggs
2 cups(500ml)milk
1 tspvanillabeanpaste
2 tbspureicingsugar
(^1) / 2 cup(125ml)pure(thin)cream
50gdark(70%)chocolate,chopped,
plus extra grated to serve
Preheattheovento160°C.
Greasethebaseandsidesofa 4-cup
(1L)loafpanandlinewithbakingpaper,
leaving10cmoverhangingoneachside.
Mashbanana,sugar,spices,sultanas
anda pinchofsaltflakestogetherin a
bowl.Spreadbutterover1 sideofeach
breadslice.Place2 slicesofbread,
buttered-sideup,in baseofprepared
pan.Spreadeachremainingsliceofbread
withsomebananamixture,thenarrange,
standingupright,alonglengthofloafpan.
Whiskeggs,milkandvanillatogether
in a bowl.In 3 batches,pouroverbread,
lettingmixturecompletelysoakthrough
breadbeforeaddingthenextbatch. Set
asidefor5 minutestosoak.
Coverloafpanwithbakingpaperand
foil.Placeloafpanin a deeproastingpan
andaddboilingwatertocomehalfwayup
thesidesofloafpan.Bakefor 40 minutes
oruntiljustset.Removefromoven,then
removefoilandbakingpaper,anddust
withicingsugar.Increaseovento220°C
andreturnpuddingtoovenfora further
20 minutestocrisptopandmeltsugar.
Meanwhile,heatcreamin a small
saucepanandbringtojustbelowtheboil.
Placechocolatein a heatproofbowland
pourhotcreamoverthetop.Setasidefor
2-3minutes,thenstiruntilmeltedand
smooth.Pouroverpuddingandtop with
extra grated chocolate to serve.
