DESSERTHASTHEpowertomakeusgoweakatthekneesandthere is no denying
thefactthata fabuloussweettreatis a befittingendtoanymeal.
Itmakesit evenmorespectacularwheneastmeetswest,whichis wherethismonth’s
recipecomesin.I havetakena classicdessertcheesecakeanddressedit upwith
Indianflair.Theuseof Indian flavours creates something a little different yet familiar
atthesametime.
In thiscase,I’musinganingredientthat’sincrediblypopularin bothsavouryand
sweetdishesin IndiaandthroughoutAsia– jaggery.When you marry the flavours of
jaggeryandcheesecake,youarein dessertheaven!
If youhaven’theardoforseenjaggeryin theflesh,it’sanunspun,unrefinedsugar
product.Asit’snotspunduringproduction,themolassesremain,givingit a deep,rich
sugar-likeflavour.In appearance, it looks like rough cubes that range in colour from
lightgoldentodarkbrown.

JAGGERYCHEESECAKE
SERVES 8
Begin this recipe 7 hours ahead.

350gplaindigestivebiscuits
120ggheeorunsalted butter,
melted,cooled
600gcreamcheese,softened
350gjaggery(from Indian food stores),
chopped
1 cup(250g)sourcream
200mlthickenedcream
4 eggs,lightlybeaten

(^1) / 3 cup(50g)cornflour
2 tsplemonjuice
50g slivered almonds, toasted
Preheattheovento180°C.Greasea
round20cmspringformcakepanandline
thebaseandsidewithbakingpaper.
Placebiscuitsin a foodprocessorand
whiztocrumbs.Addgheeandwhizto
combine.Pressintothebaseof prepared
panandchilluntilneeded.
Placecreamcheeseand250gjaggery
ina standmixerfittedwiththepaddle
attachmentandbeatuntilsmooth.Beat
in sourcreamandcream.Addeggs,1 at
a time,beatingwellaftereachaddition.
Beatincornflourandlemonjuice,and
pouroverbase.Wraptheoutsideofthe
panin3 layersoffoilandplaceina large
roastingpan.Addenoughboilingwater
tocomehalfwayupthesidesofthecake.
Reduceovento150°Candbakecake
for1 hour 40 minutesoruntiljustsetwith
a gentlewobbleinthecentre.Turnoff
ovenandcoolfor1 hourintheoven.
Removecakefromoven,cooltoroom
temperature,thenchillfor3 hoursoruntil
cold.Removefrom pan and place on a
servingplate.
Whenreadytoserve,meltremaining
100gjaggeryina smallsaucepanover
mediumheatwith2 tbswater,stirringto
dissolvethejaggery.Coolcompletely,
thenpouroverthecake and scatter with
almonds to serve.
