I LOVE A NICE BAKE

CARDAMOMBROWNIESWITH
SWEETENED CONDENSED MILK ICE CREAM
SERVES8-10
Begin this recipe 1 day ahead.

250gunsaltedbutter,melted,cooled
2 tbsvegetableoiloroliveoil
1 firmlypackedcup(250g) brown sugar
200gcaster sugar
4 eggs
2 tspvanillaextract
1 cup(150g)plainflour

(^3) / 4 cup(100g)Dutchcocoapowder
1 tspgroundcardamom
100g dark (70%) chocolate, coarsely chopped
SWEETENEDCONDENSEDMILKICECREAM
395gcansweetenedcondensed milk
200mlpure(thin)cream
200gGreekyoghurt
2 tsp vanilla extract
Fortheicecream,placetheunopenedcanofcondensedmilkin
a largesaucepanandcovergenerouslywithwater.Bringtothe
boiloverhighheat,thenreduceheattomediumandsimmerfor
1 hour 30 minutes(thecanshouldstayfullysubmerged,somonitor
closelyandtopupwaterif necessary).Remove can from water and
setasideuntilcompletelycooled.
Placecreamandyoghurtin a standmixerfittedwiththewhisk
attachmentandwhiskonlowspeeduntiljustcombined.Open
cooledcanandgraduallyspoonin thecaramel(thecaramelcan
beslightlywarm),vanillaanda pinchofseasalt.Whiskuntilwell
combinedandslightlyfluffier.Pourintoa 4-cup(1L)freezer-proof
container,coverandfreezeforatleast 6 hours or until set (store in
thefreezerforupto2 weeks).
Preheatovento180°C.Linebaseandsidesofa 30cmx 20cm
lamingtonorslicepanwithbakingpaper.Combinebutter,oiland
sugarsina largebowl.Addeggsandvanilla,andwhiskuntilwell
combined.Siftflour,cocoa,^1 / 2 tspseasaltandcardamomovertop
andstiruntilwellcombined.Stirin chocolate.Pourintoprepared
panandbakefor 35 minutesoruntiledgesaresetwitha faint
wobblein thecentre.Remove from oven, place pan on a wire rack
andstandfor5 minutes.
Cutbrownieintopieces(asbigorsmallasyou like) and serve

youngwomanwhowasromancingherfarmerfellatotheaisle
usingbakedgoodsashercattledog.I’dawakeona Friday
morning(ish)tothearomaoffreshyo-yosorchocolateAfghan
biscuitsandrise,drawntowardsthekitchenbythissiren’ssong.
Wheretheyshouldhavebeen,however,wasjustanemptycake
rack,stillslightlywarm,andsomecrumbs.Thebakedgoodswere
alreadyhalfwaydownthefreewaytothefarmer,neatlytuckedin
a batteredoldcaketin. Not even one left behind for the flatmate.
Sothoughtless...
I’dmakea soothingcupofmilkyteatocalmmyself,butthatjust
madeit worse,myfingerstwitchingwithoutanythingtodunk.
Theideaofsomethingwarmandsweetfromtheovenshook
mefromsidetosidelikea chewtoyin themouthofa hyper
terrier,untilI discoveredherhandwrittenrecipebookandstarted
bakingmyownversionsofwhatevershe’dexportedtothefarm.
Thismonth,letmesharewithyouthreeofmyfavouritethings
I havelearnedtobakein theensuing 23 years(plus,if youheadto

Caramelslice?Jellyslice?Vanillaslice(reallya slicein nameonly)?

in slicebaking,butyou’llstruggletofinda betterslicethanthe
honey-almond-toppedBusDriver’sMother-in-Law’s Slice. It is one
ofthetwogreatAustralianslices.
Thisbakeis sosimple.First,makethebasebycombining
90gofmeltedbutter,120gofsoftbrownsugar,150gofplain
flourand70gofgroundalmonds.Pressintoa small(18cmx 32cm)
linedlamingtonpanandbakein a preheated170°Covenfor
12 minutes.Forthealmondtopping,melt115gofhoneyand
160gofchoppedbutterin a smallpanandsimmer for three
minutes.Stirin 240gofsliveredalmonds.
Removethebasefromtheovenwhenlightlybrownedandpour
overthealmondtopping.Returntotheovenandbakeforanother
15 minutes.Coolin the tray, sprinkle over a salt flakes, then cut
intosquares.Done!
THEBESTCOOKIE
Thiscookieis asstupidlysimpletomakeasit is torememberthe
recipe.Justmixa cupeachofdesiccatedcoconut,self-raising
flourandsugartogetherwithoneeggand125gofmeltedbutter.
Spoonontoa linedbakingtray,leavingspacetospread.Bakein
a preheated180°Covenfor 10 minutes.Thecookieswillbesoft
outoftheoven,soleavethemonthetrayfora couple of minutes
tofirmbeforetransferringtowirerackstocool.
