andreturntofridgefora further
30 minutes.Removefromfridgeand,
usinga largeplateasa guide,cutouttwo
28cmrounds.Transfertobakingtrays
linedwithbakingpaperandreturnto
fridgewhileyoupreparepumpkin.
Ina bowl,mashthepumpkinintoa
roughpureeandspreadhalfontoeach
pastrybase,leavinga 5cmpastryborder.
Foldpastryborderovertocontainthe
filling,leavingcentreexposed,andcrimp
theedgestogether.Brushthepastrywith
eggandreturntheassembledgalettes
tothefridge.Preheattheovento180°C.
Bakegalettesfor 15 minutes,then
reduceovento170°Candbakefora
further20-25minutesoruntilthepastryis
goldenbrown.Setasidetocoolslightly.
Toserve,crumbleStiltonoverpumpkin
andscatterwithseeds.Topwithherbsand
salad leaves, and drizzle with extra oil.

1 tspgroundcardamom
80gunsaltedbutter
1 cup(250ml)milk,plusextra2 tsp
22 / 3 cup (400g) strong (baker’s) flour

70gcastersugar
7gsachetinstantdriedyeast
1 egg,atroomtemperature, plus
extraeggtobrush
50gapricotjam
50gorangemarmalade
Demerara sugar, to sprinkle

FILLING
80gsoftbrownsugar
75gunsaltedbutter,softened
2 tspgroundcinnamon
1 tsprunnyhoney
Finely grated zest of 1 orange

Placegroundcardamomandbutterin
a saucepanoverlowheatandcookfor
2 minutestoinfuse,beingcarefulthe
butterdoesn’tbrown.Setasidetocool.
Placemilkin a separatesaucepanover
medium-lowheatandbringto82°Con
a kitchenthermometer.Addbutterand
cardamommixture,stirtocombine,then
setasidetocooltoroomtemperature.

Combineflour,sugaranddriedyeastin
a standmixerfittedwitha doughhook.
Addmilkmixtureandkneadonlowspeed

Increasespeedtohighandkneadfor
3-4minutesoruntilthedoughcomes
togetherin a ball.Turnthedoughoutonto

teatowelandsetasidefor 30 minutesto
rest.Repeatkneadingprocess,thenrest
again,coveredwitha dampteatowel.
After 20 minutes,placethecovereddough
inthefridgefor2-3hourstorest.
Tomakethefilling,placeallingredients
instandmixerfittedwiththepaddle
attachmentandbeatuntilcombined.
Setasideuntilrequired.
Greasetwo6-holemuffinpans (you
willonlymake 10 buns).
