2 cups(500ml)milk
1 vanillabean,split,seedsscraped
6 cardamompods, bruised
5 eggyolks
(^1) / 3 cup (75g) caster sugar
Preheattheovento170ºC.Lightlygrease
a 22cmroundcakepanandline the base
andsidewithbakingpaper.
Placealmondmeal,breadcrumbs,
bakingpowderandorangezestin a
bowlandstirtocombine.Placecaster
sugarandeggsin a standmixerfitted
withthewhiskattachmentandwhisk
untilthickandpale.Withthemotor
running,graduallyaddoilandwhisk

GINGERICING
150gunsaltedbutter,softened

dateswith300mlwaterin a small
saucepan.Bringtoboil,thenimmediately

tostandfor5-6minutesoruntildate
beginstobreakdown.Placedatemixture
in a foodprocessorand whiz until smooth.
Coolcompletely.
In a standmixerfittedwiththepaddle
attachment,beatbutterandsugaruntil
thickandpale.Addeggs,1 ata time,
beatingwellaftereachaddition.Siftthe
flourandspicestogetherina bowl.
Gentlyfoldflourmixtureintobutter
mixture,thenfoldin cooleddatemixture.
Pourbatterintopreparedpanand
smoothtopwiththebackofa spoon.
Bakefor1 houroruntila skewer
insertedin thecentrecomesoutclean.
