WINTERGREENS TORTE

somanygreenspackedin.If you’re
feelingadventurous,youcanaddsome
backyardweeds– mallowanddandelion
areawesome.This torte is even better the
next day.”


300gsilverbeet,washed
300gkale,washed
200gEnglishspinach,washed
100gunsaltedbutter


(^1) / 4 cup(60ml)extravirgin olive oil
1 leek,thinlysliced
4 garliccloves,crushed
1 longredchilli(optional),thinlysliced
40gflat-leafparsley, leaves and stems
finelychopped
40gcoriander,leaves and stems
finelychopped
40gdill,leaves and stems finely
chopped
6 eggs
1 tbschillisauce(optional)
Naturalyoghurt and salad leaves,
to serve
Tear silverbeet,kaleandspinachleaves
fromtheirstalks.Shredleaves
andfinelychopstalks,and
placein separatebowls.
Heata medium
non-stickfrypanover
mediumheat.Add
halfthebutterand
1 tbsoliveoil.Add
leekandcook,stirring
occasionally,for2-3minutes.
Addstalks,garlicandchilli,
if using,andcookfora
further5-6minutesor
untilstalksandleeks
havesoftened.Season
totaste.Transferleek
mixturetoa heatproof
bowl.Wipepanclean
and set aside.
Filla largesaucepanthree-quartersfull
ofwaterandplaceoverhighheat.Adda
pinchofsaltflakesand1 tbsoliveoil,and
bringtotheboil.In batches,addshredded
leavesandblanchfor2-3minutesoruntil
wilted.Drainleavesin a colanderand
refreshundercoldrunningwateruntilcool
enoughtohandle.Placein a largeclean
teatowelandwringasmuchwaterfrom
theleavesaspossible.Loosenleaves,
addtoleekmixturewithherbsandtoss
tocombine.Addtheeggs,1 at a time,
mixingwellwithyourhandsuntil
combined.Seasonandstir through
chillisauce,if using.
Placecleanedpanovermediumheat.
Addremaining50gbutterand1 tbsoil.
Pourtortemixtureintopanandusea
largemetalspoontocompressasmuch
aspossible.Cookfor1-2minutes,then
gentlypushthesidesofthetortemixture
tothemiddleofthepan.Spreadand
compressthemixtureevenlyasit cooks,
makingsureit is thesamethickness
aroundthewholepan.Coverwitha lid
orfoilandcook,gentlyshakingpan,for
8-10minutesoruntilbaseandedgesof
tortearesetandthemiddleis stillwobbly.
Carefullyinvertthetortefromthepan
ontoa largeheatproofplateorbaking
trayandquicklyslideit backintothepan.
Cookfora further6-8minutesoruntilset
in thecentre.Removetortefrompanand
placeona servingplate.Serveatroom
temperaturewith natural yoghurt and
salad leaves.
CREMEFRAICHEMOUSSEWITH
RHUBARB& ORANGE GRANITA
SERVES 6
Begin this recipe at least 8 hours ahead.
2 cups(500ml)pure(thin)cream
11 / 2 titanium-strengthgelatine leaves
(^1) / 2 cup(110g)castersugar
1 tspvanillabeanpaste
300g creme fraiche
RHUBARB& ORANGEGRANITA
1 cup (250ml) white wine
11 / 4 cups(165g)castersugar
6 oranges,juicedandstrained
(youwillneed520mljuice),peel
from2 oranges reserved and cut
intostrips
4 lemonthyme sprigs, plus extra leaves
toserve
1 bunchrhubarb, trimmed, cut into
5cmpieces
70gmacadamias, roasted, roughly
chopped
Place300mlcreamin a standmixerfitted
withthewhiskattachmentandwhisk
tosoftpeaks.Transfertoa bowl and
refrigerateuntilneeded.
Soakgelatineleavesin coldwaterfor
5 minutestosoften.Heatsugar,vanilla
andremaining200mlcreamin a small
saucepanovermediumheat,stirring
occasionally,for6-8minutesoruntilthe
sugaris dissolved.Removefromtheheat
andstirin thegelatine.Strainthrough
a finesieveintoa heatproofbowland
standuntilwarmtothetouch.Whiskin
cremefraicheuntiljustcombined,then
foldin thewhippedcream,beingcareful
nottoovermixandsplitthemousse.
Dividethemousseamongsix1-cup
(250ml)shallowdishesandrefrigerate
for3-4hoursoruntilset.
Fortherhubarbandorangegranita,
placethewhitewine,sugar,orangejuice
andpeel,lemonthymeand3 cups(750ml)
waterin a mediumsaucepan.Bringtothe
boil,thenreduceheattomediumand
simmer.Addrhubarbandcookfor
6-8minutesoruntiljusttender.Using
a largespoon,transfertherhubarbtoa
heatproofbowlandpouroverone-quarter
ofthepoachingliquid.Refrigerateuntil
needed.Straintheremainingpoaching
liquidintoa shallow4-cup(1L)container
andfreezefor5-6hoursoruntilfrozen.
Oncefrozen,scrapethetopofthegranita
witha forkuntilfluffy.Return to freezer
anduseasneeded.
Topmoussewithrhubarbandgranita,
andscatterwithmacadamiaandextra
lemon thyme leaves to serve.
