1 cup(140g)pecans,roughlychopped
1 vanillabean,split,seedsscraped

3 tspbakingpowder
300gunsaltedbutter, chopped
1 cup(250ml)milk
12 (160g)driedfigs,roughly chopped
Ice cream, to serve
MAPLESYRUPSAUCE
3 cups(750ml)maplesyrup
100g slightly salted butter, melted
Forthesauce,placethemaplesyrup
in a largebowl.Graduallyaddbutter,
whiskinguntilwellcombined.Transfer
one-quartersaucetoa smallsaucepan
overmedium-highheatandreduce
rapidlyfor4-5minutesoruntilsyrupy,to
makemaplesyrupglaze.Setglaze aside
tocooltoroomtemperature.
Preheatovento180°C.Greasea 27cm
x 3cm,5-cup(1.25L)roundbakingdish.
Placeflour,halfthepecan,vanillaseeds,
sugar,bakingpowderandbutterin a food
processorandwhizuntilresemblingfine
breadcrumbs.Graduallyaddmilkand
whizuntila smoothdoughforms.Turnout
doughontoa cleanworksurface,divide
into 12 equalportionsandrollintoballs.
Arrangeballsin prepareddish.
Evenlyscatterfigandremaining
(^1) / 2 cup(70g)pecanoverpecanballs.Pour
overremainingmaplesyrupsauce,place
bakingdishona largebakingtrayand
bakefor40-45minutesoruntilcooked
anda skewerinserted in pudding comes
outclean.
Transferpuddingtoa largeheatproof
servingplatteranddrizzlewithmaple
syrupglaze.Scatterwithseasalt flakes
and serve with ice cream.

Preheatovento200°C.Greasea 5-cup
(1.25L)bakingdish.Placechocolateand
butterin a smallsaucepanoverlowheat
andcookfor3-4minutesoruntilmelted.
Removefromheatandcoolcompletely.
Placeeggsandsugarin a standmixer
fittedwiththewhiskattachmentand
whiskuntilpaleandfluffy.Combinethe
flourandalmondmealin a bowlandfold
intotheeggmixture.Gently fold through
chocolatemixture.
Pourbatterintoprepareddishandtap
gentlytolevelout.Placebakingdishona
bakingtrayandbakefor15-20minutesor
untilpuddingis justcookedbutstillsoft
andslightlywobblyin themiddle.
Removefromovenand stand on a wire
rackfor5 minutes.
Transferbakingdishtoa heatproof
servingplatter.Dustwithcocoaand
spoon over thickened cream to serve.
