2 largecarrots,halvedlengthwise
2.5Lvegetablestock
5 garliccloves,bruised

12 driedshiitakemushrooms
1 sheet dried kelp

600mlbraising

Forthebraisingstock,heata large
chargrillpantohighheat.Grillonionand
carrot,turning,for6-8minutesoruntil
charredallover.Transferonionandcarrot
toa largesaucepanandplaceoverhigh
heat.Addallremainingingredients,
exceptceleriacrounds,andbringtoa
simmer.Simmerfor 30 minutes,thenadd
celeriacrounds,pushingthemdownto
ensuretheyaresubmerged.Simmer
gentlyfor10-12minutesoruntilrounds
arejusttender.Removefromheatand
standuntilcooledcompletely(theceleriac
willfinishcookingin thistime).Remove
celeriacusinga slottedspoon,drainon
papertowelandpatdry.Strainstock
througha finesieve,intoa jug,
discardingsolids.Reserve600mlstock
forthegravyandtransferremaining
stocktoanairtightcontainer(thisstock
canbefrozenforuseata laterdate).
Forthegravy,heatthecoconutoilin
a smallnon-sticksaucepanovermedium
heat.Addflourandcook,stirring
continuously,for5-6minutesoruntil
brown.Graduallywhiskin reserved
braisingstock,bringtoa simmerand
cook,whiskingcontinuously,for
6-8minutesoruntilthickened.Season
totaste.Coverandkeepwarm,stirring
occasionally,untilreadytouse.
Seasontheflour,thenspreadover
a largeplate.Placebreadcrumbsin
a largebowlwithchoppedparsley
andlemonzest.Seasonand
combine.Beateggsandmilk
togetherin a secondbowl.Working
with1 celeriacsliceat a time,lightly
coatin flour,thenin milkmixture,
andfinallyin breadcrumbmixture.
Repeatwithremainingceleriac.Place
ona trayandchillfor 15 minutes.
Halffilla largesaucepanwith
clarifiedbutterandheatto180°C
(a cubeofbreadwillturngoldenin
90 secondswhentheoilis hotenough).In
batches,frytheceleriacfor4-5minutesor
untilgolden.Removeusinga heatproof
slottedspoonanddrainonpapertowel.
Keepwarmuntilreadytoserve.Repeat
withremainingceleriac.Seasontotaste.
Serveceleriacwithmashed potato,
lemon wedges and gravy.
